We eat a lot of bacon, and I save all the grease. I have a bacon grease can that I bought at Walmart. I keep the bacon grease sitting on my kitchen counter year around. I use it all the time. I don't fill the can full, cause I don't want it getting too old, before it's used up. So, I keep the new grease in jars in the fridge. Once the can is empty, I melt the grease, and pour into my can. I only use vegetable oil occassionally when baking.

I have white rice stored in plastic jugs that is 3 yrs, old. Still good.

Besides the smell I found THAT out also by learning the hard way how fast crackers and cookies go rancid. That was a sad lesson, learned a long time ago in how to waste food and $$ on things not normally used or rotated out.
They didn't go rancid way back when.
Croutons dont go rancid, crackers like french bread, are just wheat ,water salt and a very little leaven. they are putting something different in soda crackers , to makes em taste like petroleum or chemicals when they go rancid. Bread doesnt go rancid, crackers shouldnt either! Zesta is so bad after a couple months on the shelf unopened, you cant get the taste out of your mouth!

It was frighteningly bad, how they tasted when I tried one.
I think I threw out at least four boxes,

Commercial lard usually has preservatives added, so stores longer at room temperature than home rendered lard. But if you want to keep it past its expiration date, either freeze it, can it (according to my directions above) or make soap. The old timers made a lot of soap, because soap improves with age" fats deteriorate.

at webstaurant.com you can buy the preservative packets for fats (kind of like a powder you add, i imagine) I haven't tried to use it.

When you render lard at 255F, do you do it on the stove? Most of the render lard information I've read/watched talks about doing it in a crock pot. Based on what you said, I'm assuming that you do not put it thru a canner? Also, do you store it on the shelf, or in the fridge? (I know you answer a lot of questions many times, if you have already answered all of this before, feel free just to point me to your previous post. Thanks for all the knowledge you provide to us.)
The "255F" is the necessary temperature for the lard to reach to be fully rendered. Rendering separates the pure fat from any protein bits, and also removes all water. If the lard hasn't reached 255, there is still water left, and it will spoil.

No, no canner needed. But *sterile* jars (at least run them through a sanitizing cycle in the dishwasher) are important. This is basically "open kettle canning", and it's exactly how they package it commercially... rendered, filtered (to remove cracklings and protein bits) and poured hot into the containers, then sealed.

Once sealed, the jars are shelf stable. When I open one, I put it into the fridge to store while using.

Most Crackers,cookies, and even chips will freeze just fine. Back years ago, when I was a mega couponer, I got like 60 bags of chips free in one trip. Mom told me that we would eat them before they went stale, but I packed them in pringles cans, put them in a ziplock, and put them in the freezer. They were all gone in 3-4 mos, but they didn't even get soggy. I've packed Ritz crackers the same way. Oreos I just leave in the package and put in a ziplock.
I've got white rice from 1999 that we're still eating and it's perfectly fine. It was frozen for 2 weeks, then put in a sealed bucket with O2 absorbers. It does take twice as much water to cook and a longer cooking time, and it may not have any nutritional value, but it's food.
Oil, OTOH, goes rancid in a month in the summer. No matter how low the AC is set. Flour and cornmeal the same way. It all depends on your humidity level.

I just looked at my bucket of Bacon up. It says it is triple filtered and it is rendered. So would I still need to can it or could I just freeze it? I have the Blue Ball book and my mother still cans so I know between her and the book we’d get it right. I just can’t find jars now.

I've never had rice, oils, meal, or flour go bad. Like I said, I've got jugs of white rice that are 3 yrs. old sitting on shelves in the pantry room, along with a few gallons of cooking oils. We have very high humidity levels here, but the room is ac cooled.

When I first started storing flour and meal. I brought it home from the grocery store, and put it directly into the freezer. After about 2 weeks, I would take it out, put it into gallon freezer storage bags, and back into the freezer they would go. I would pull whatever I needed from the freezer, and kept the "working out of bag" in the fridge. It never went bad.

eta.....I keep a 2 yr, rotating pantry. So, I try not to let anything stay longer than 2 yrs., before it's used. That is one reason I don't have much to go bad. Everything is dated and rotated out on a regular basis. I don't buy food storage just to put back on a shelf for 5 or 10 years down the road. We have special emergency storage food for that. I over bought the amount of rice I needed for two years, and that's the reason I have 3 yr. old rice on my shelves. I have some egg noodles that are that old, too, and they are still good.

No, you can freeze it. I can it because we have limited freezer space (7 freezers, and no room! Bought an 8th one for the 5 hogs that are going next week)

If you haven't looked in the last few days, take a look again. There are several reports at different sites (including a couple here) that people are finding new shipments of lids (and jars) at Walmart - but they are going fast.
I will definitely keep an eye out for more.

My digestive system can't handle vegetable oil. I avoid it at all costs.

The only oils I use are bacon grease (I make myself),
Coconut oil, extra virgin olive oil.

I have recently discovered waygu beef fat (tallow) and it really ramps up the beef favor.

You can buy the waygu beef tallow at amazon.

I discovered a delicious tea that was on a huge sale at Kroger! I think 1.65$ /box?

...it’s called PG Tips, an English tea.... wow, is it delicious! It’s very sweet and herbal like earl grey but also smooth and “full tasting”. Not bitter at all!
I’d never seen it before, so for the price grabbed two boxes (which are pretty large, and shaped like a big colorful cube of you try to find some)

Just an interesting find I thought to share. I’m loading up on all teas right now. This was a good one! I’m going to look and see if our kroger still has any on sale.

No, PG Tips is a popular British black tea blend of the finest Assam, Ceylon and Kenyan teas which produces a rich and refreshing flavor. We use it to make Kombucha. Good stuff!
Its very good, I tried it making a strong cup just for a test and it was not bitter.

Brown rice can go rancid in 3 months if its not in the freezer., cookie tins won't keep rice from going rancid, maybe not quite as fast as a paper bag but not really a big difference.

I have brown rice in heat sealed mylar bags. I did this a little over a year ago. Maybe I should check one...

Did a Monday grocery run to Hannafords (Chittenden Cty, Vt.) Had a $27 loyalty credit and $2 manufact. coupon. Had to pick up a prescription too.

First off, script wasn't ready, even though app said yes. Tech asked me to wait ten minutes. No problem, did my shopping.

Had a list, top off stuff that use regular like. They moved a lot of stuff around. Candy, chocolates, have been moved across the aisle and looks to be noticeably smaller. Only had one of the store brand 72% dark chocolate, bought that and a Lindt 40%.

Store brand dairy was fully stocked, low on creams, especially heavy. Didn't see any light. Decent amount of half and half if your weren't being choosy.

Chicken was on sale. Got some ground and was interested in the $1.99 boneless breasts. Those boneless breasts looked almost as big as a football! Huge. No thanks! Guessing somewhere along the way some agricorp wasn't able to get their chickens to slaughter or market and kept them alive for later. Imagined them being tough.

Got everything I wanted except blueberries. Almost bought red grapes on sale but again, they were huge, just like the blueberries last week and chicken breasts this week. To me that's frankenfood.

Stuff was there for the most part, as long as you didn't want a lot of multiples. Prepacked sandwich meat totally low again. Plenty of honey ham and turkey if you like it.

Good news is they had refrigerator lightbulbs. Or a refrigerator bulb. For $.99 even. Much better than the $5.99 on amazon.

Prescription could only be partially filled. Back to that again. Don't think it was because I'm 2 days early. Usually they call immediately if there's going to be a delay. So back on Wednesday to pick up the remaining 85 days worth.
The old pharmacist ran that place awesome and gave a crap.

Store was pretty dirty, a lot of weird in aisle displays blocking shelves and holding up traffic. Not sure what's up with that when there's empty shelf space.

Belt was dirty at check out, that is totally new, and there was bits of trash around on the floor. Hopefully it's just a lack of help and a slow day.

All in all pretty good. No one tried to kill me. Got my stuff, sort of, really wanted the pills. Was able to drive there and back without showing papers.

How long are you prepped for?
Im considering 50 lbs of lard, 4 gallons of corn oil, 35lb box of canola oil, and 6 4lb cans of Crisco

Good start.
4 quart cases of rendered pig fat, several gallons of coconut oil and a couple of bottles of olive oil. I'm prepped for as long as I can hold out.

We have 7 freezers of different sizes.

God is good all the time
