FOOD Happy Thanksgiving!! What’s on the menu?

It's just me and DH. Too many animals and no one but us to feed them. I am smoking a turkey for the first time. Just checked it and it looks beautiful but still a ways to go. Just took some stuffed jalapeno peppers out of the oven. We have been low carb, high protein and high fat, NOT LOW CALORIE, no white flour, no sugar, since DH was diagnosed with diabetes in May but I am actually putting together a yummy low carb dinner. Smoked turkey, ham, green beans cooked in bacon with onion, deviled eggs, pickles, cheese, olives, our one sin will be half of a small baked potato. For dessert, low carb pumpkin pie bars and strawberries over low carb cake with whip cream. We will have left overs until Christmas I think HA!!

Before anyone, screams my husband has lost 90 LBS since May, cholesterol is 160 and his blood sugar is 80's to 90's. This way of eating has worked wonders for us. He has been outside feeding, fixing stalls and cleaning the barn all this morning. A far cry from his level of activity before diagnosis. Praise the Lord!

Happy Thanksgiving!

DH & I are having his mom and brother over for dinner today. We are skipping the turkey and opted for gumbo. Started it about 5 hours ago and it needs about another hour till ready. Hawaiian rolls and pie added to complete the meal.

Had our thanksgiving dinner on Saturday with the whole family. Today hubby and SIL had rib eye steaks, DD and I enjoyed filet mignon on the grill, fried potatoes with onions, buttered corn, rolls. We all have colds, so we ate and then daughter and SIL headed back to the comfort of their home.

We had a really nice surprise for this Thanksgiving.

I had made reservations for us to go to Ruth's Chris steak house today for their Thanksgiving dinner. We were going to get dressed up and have a wonderful time.

Until my wife got home from work yesterday about 4pm. She walks into the house and there is a GIGANTIC cooler type box from the honey baked ham company sitting on our dining room table; along with a very nice card from the management of the apartment we live in. As a way of thanking us for being long term residents of our place (over 20 years), they bought us an entire Thanksgiving meal from Honey Baked Ham. Talk about a pleasant surprise!

I help the complex stay clean of rif raff, people using the dumpsters illegally, and keeping our part of the complex safe and trash (in a people context) free. It's a mixed complex with a park behind it but where we are it's like Mr. Rodgers neighborhood and I keep it that way. Guess they appreciate that. :)

Inside this box was easily dinner for 4-6 people. It had-

a 12 pound turkey
a good sized spiral sliced ham.
cornbread dressin'
green bean casserole
sweet potato souffle'
turkey giblet gravy
garlic mashed potatoes
dinner rolls
and a proper southern (not too sweet) pecan pie

Good Lord there was a lot of food in that cooler! Wife called up the leasing office thinking there was a mistake-they said no mistake, thanks for being good long term residents and Happy Thanksgiving.

So, rather than going out we stayed in and fixed it all here. And it was truly delicious. We ate around 2 today, so now my wife is napping on the couch, the dog (who had more than his share of turkey and ham) is snoring loudly in the chair with me, and I'm sipping on a cup of Russian tea and nibbling at some more ham (oh it's so good!) I am in the process of overdosing on ham. Yum.

We always have a lot to be thankful for-God's bounty is boundless. Today we had a little something extra to be thankful for.

Update: we decided to head over to Cracker Barrel after waiting about 1-1/2 hours. Went in and spoke to the hostess. Yes, she found my name on the list, and said the wait would be about 2-1/2 hours. That’s 2-1/2 hours from that point when we checked in with her! So we asked how long it might be to get a takeout order. She checked with the takeout manager and, you guessed it - about 2-1/2 hours. I am unable physically to “wait” anywhere for very long (which is why we did the online check-in), so we told her to remove us from the list.

Thank God for Burger King!

It was! It's now 1835 and I think my missus has completely polished off the pecan pie. I'm still full.
Seems the management company does this for a resident in each of their properties-they have 8 properties in VA and MD. I never knew about it but it's a nice program.
And it was so good. The turkey was even tasty (and I just don't like turkey that much).

I have no idea what I'm having. :shr:

Today I feel like Paul…headed into a pagan temple. My neighbor (last one left of her family) asked me if I would like to go with her to her friend Jonathan's for Thanksgiving. Jonathan used to live in New York, was a renown chef who loves to collect antiques and is GAY. His relationship went awry and moved back to his family’s home in central, IL. He has a new lover – Claudio. So we will be dining with Jonathan and Claudio, as well as Claudio's brother, his wife and their 4 children tonight. My neighbor said he isn’t fixing a turkey (Good!) but that it will be something *she-she-poo-poo* and “fabulous” although she herself doesn’t know what it will be.

So tonight should be an adventure. If we go around the table stating what we’re grateful for, it’ll be interesting to see their reactions as I put Christ – Who never leaves me – at the top of my list. (The first time I venture out on a holiday, 5 years after my husband’s death, and I’m headed into a seedy lion’s den with supposedly excellent food and wonderful antiques. LOL…figures!)

We are gonna need an update on this one. :D

I made what may be the best turkey we've ever had. Cut up an onion & stuffed in the cavity, rubbed butter & rosemary under the skin and on outside, then sprinkled liberally with Cavenders Greek Seasoning. Used an electric roaster at 400 degrees for 30 minutes, then 2 hours at 350. It is so moist, it's amazing. Meat fell off the bone. (12 pound bird.)

Also had:
Cornbread dressing
Gravy
Mashed potatoes
Corn on the cob
Rolls
Cranberry sauce
Pecan pie
Key lime pie

We're all waddling, but it sure was good. I won't have to cook for a couple of days either. Lol

Oh boy, the pictures are equal parts hysterical and disturbing lol.

Was just me and a couple other orphans here for dinner. I did the turkey.sweet and mashed taters.dressing.gbcassarole.veggie/cheese/fruit plates.cranberry sauce.french silk and pumpkin pies.

For some reason though I stuck mostly to the cheese balls, veggies and cranberry sauce. Was planning to spoil the livestock with carrots and the porch punkins, but after subcomming to pie and coffee I decided it wasn't like they could read a calendar and that my time was better spent holding the couch down.

I would, given the choice, still have a large family and friend gatherings, with all the complications and messiness that sometimes entails. Still, it was rather nice to have a small number and the laid back day in leiu of all the pomp of the other stages of life.

Wow!! What a blessing! That is very cool. I love knowing there are still people in the world like that who appreciate good character and loyalty.

Sheesh if I had known it was going to cause such a problem I wouldn’t have bothered posting. We raise our own beef and it all costs $10.00/pound from ground beef to prime rib.

I’m glad you mentioned it. Don’t let others shame you for your choice. I just contacted the local farm that we get our beef from To wish them a happy Thanksgiving, and out of curiosity asked how much for a prime rib roast. She said $14 a lb. very pricey, but it will be worth it. It’s just the two of us, so we'll have plenty of leftovers. I looked up several recipes, and am excited to make this for Christmas.

We buy our grass finished beef from them at $8 a pound, so we’re happy to give them the business.

I agree. No money ever spent on food, or books is wasted money. You can't take it with you when your'e gone, and besides, $14.00 a pound ain't bad all things considered. Food is expensive these days. But a prime rib roast isn't going to have much, if any fat or waste to it. You're getting a great cut of some very delicious beef.
And those leftovers are going to be super tasty! Save me a prime rib sandwich, on rye bread with a touch of mayonnaise and horseradish on it. Yum.....

We had pecan pie and the sweet potato souffle' with it, maybe they ordered it extra.
In any event it was delicious. Really. You know how stuff like this can come out kind of bleh, like a TV dinner. Not this one, it was great. It comes in a cooler type box with ice packs in it, very well packed. It was good, it's 10pm and I'm still stuffed to the gills.

I didn't know either. We may do that for Christmas. :D

After working like dogs outside all day, pounding T-posts, moving livestock and cleaning up storm damage, we settled for apocolypse faire, fried spam and eggs. Fig Newton for desert. It hit the spot too! :)

I got my prime rib fix Saturday at a little place in San Jose I used to be a regular at before my economic exile from Si Valley (two sons of a friend of mine went with me over the hills to do the lifting in getting my storage in order. I told the kids to order whatever they wanted. They insisted on burgers despite me telling them twice...oh well these kids got to sit there and watch me enjoy a nice cut of meat.)

A couple of buddies came over from the East Bay and we went out for an early dinner for Thanksgiving. We ended up at IHOP and most of us had their turkey dinner, actually not bad for the price point....ETA: The line at Golden Corral even at 4 PM was literally out into the parking lot....

I think they actually have a Turkey Spam. Never tried the turkey. Usually go with the Jalapeno Spam or Bacon Spam.

For just DD and I, we get those 3-4 pound Butterball turkey breast roasts. I am so done dealing with a 14 pound pterodactyl carcass. DD didn't look close and grabbed a Butterball Cajun marinated variety. It was very good actually. I added a few strips of low-sodium bacon on the top and DD used the bacon to make green beans with bacon, diced onion, white sesame seeds, cooked in olive oil with a splash of apple cider vinegar and a spritz of lemon.

For spuds I made garlic hand smashed potatoes. Instead of milk or cream I added plain Greek yogurt along with five pats of butter and a sprinkle of seasoned salt and chives as a topping. Those were -really- good potatoes. I will definitely do that again.

Bev, a college friend and I went to Cracker Barrel today. We waited a little more than an hour. They had told us 1 hour and 45 minutes. The Thanksgiving meal was great. We had sweet potato casserole, ham, turkey and dressing, green beans, biscuits, coffee, and pumpkin pie all for $12.95. Good meal and great price. I'm sorry you didn't get to eat there.

We actually did have a bird on the menu but there was so much we had to get accomplished today, hubby decided against butchering on top of everything else. So it got to live another day, - or two. It's one of those meat chickens that grow big and fast. He can hardly carry his own weight. We'll have to dispatch him soon, before he dies of a heart attack! He was a 50 cent special at Tractor Supply back in the summer along with a bunch of layers they were trying to get rid of quickly :) Fourteen birds for seven bucks was an offer we couldn't refuse.

Had a good meal today. Turkey and mashed potatoes, gravy, sage stuffing, creamed corn, cranberries, and rolls. Dessert, meanwhile, featured mud pie, pecan pie, apple cake, and cookie bars, a favorite of mine since earliest childhood. Mom asks most every year what I'd like to see for dessert, and I say, of course cookie bars. And she rolls her eyes and laughs and says, yes, of course cookie bars.

Then dinner got a mite odd this year. Out of nowhere, Grandma opines that she hates Christmas now. We're all a mite taken aback by this, and ask what in the world she means. Well, she says, she's sick to death of gift shopping for family as she has NO IDEA what to get them. We're all fairly old; I'm set to turn 40 this June. So essentially, after a slight discussion, we've agreed to pretty much stop shopping. Whatever's already in is in, but that's about it. Strange how it worked out.

The same thing we have every year- drama. I should have gone and fed the homeless like I did the year no one was home. One of the best, most enjoyable Thanksgivings ever spent, and with actually thankful people. Insanity doing the same thing over and over expecting a different result. The family can go stand in a 2-3 hour line at a Casino buffet next year. I hope for their sake they saved a Honey Baked Ham coupon for Christmas.

Coming in a day late to the thread, I'm still gonna give our menu for yesterdays' meal. We're still eating leftovers today.

Roasted turkey, roasted boneless smoked ham, chicken dressing with giblet gravy, green bean casserole, plain green beans with bacon ( for those who detest green bean casserole ), creamed corn, caramelized carrots, mashed potatoes, sweet potato casserole, peas, home made mac and cheese, deviled eggs, and rolls. For dessert....pumpkin pie, pecan pie, cool whip, fruit salads, and homemade apple with orange marmalade tarts.
