Recipe Zucchini casserole

6 cups shredded or sliced zucchini
1 cup shredded carrot
1/4 cup minced onion
4 tblsp butter
4 tblsp flour
2 cups milk
1 can cream of chicken soup
1 cup sour cream
8 oz. box of stuffing mix

Cook onion in butter until softened. Add flour and milk to make white sauce. Add veggies, soup, and sour cream. Mix well.

In 9x13 pan, spread 1/2 of stuffing. Pour veggie mixture on top; top with remaining stuffing mix and bake at 350* for 30 minutes or until heated through.

I usually add a cup or so of chopped meat (chicken or ham), and will substitute any 'cream of' soup, including homemade. I also substitute any fat (schmaltz or bacon grease) for the butter.

That really sounds good, I like zucchini in just about any form.

I was hoping to make this political and start an argument with somebody, but sometimes a zucchini casserole is just a zucchini casserole.

I'll add another one and we can argue:

Zucchini Pizza Casserole (gluten free)
4 cups shredded zucchini
1/2 tsp salt
2 large eggs
1/2 cup Parmesan cheese
2 cups shredded mozzarella
1 cup shredded cheddar
1 lb. ground beef
1/2 cup chopped onion
1 can (15 ounce) tomato sauce
- mushrooms, peppers, olives, anchovies, whatever your favorite pizza topping is

Place zucchini in colander and sprinkle with salt. Let set for 10 minutes, then squeeze out all moisture.

Combine with eggs, Parmesan cheese and half the other cheeses. Put in a greased 9x13 pan and bake at 400* for 20 minutes. Cook beef with onion, drain. Add tomato sauce and spoon over baked zucchini mixture. Top with pizza toppings and remaining cheese. Bake another 20 minutes until heated through.

Freezes well.


Now.... we can argue over toppings. Personally, i like substituting sausage for the beef and adding mushrooms and a little pepperoni. I guess you could do peppers, ham, and pineapple....

For 5hose of you who don’t want to shred veggies you can use a mandolin to make long thin slices and layer 5he carrot and zucchini like lasagna noodles.
