North to the Future
Starting to think I should look into finishing and publishing the cookbook I started many years ago. Working title was How to Eat Incredibly Well for Incredibly Little. May have to update for 2022: How to Eat Bugs — ha!

Really have been working on that book from my own life experiences and experiments…and the occasional bout abject poverty ;) Thank you Packy for the vid!

Interesting to run across this thread tonight as I’d been thinking about this issue today. Tonight I made a Parmesan noodle with chicken dish, green beans and pears (canned) for our supper. It cost $4.27 in total and fed five people with leftover chicken and noodles. Not necessarily super nutritious, but it was good. :)

I have seen vids by Dr. Berg and others that quoted studies showing that rice and potatoes prompt a lower insulin spike if they are cooled after they are cooked, But when you are keeping your carbs under 20 per day any amount in any form is too much.
That could be a fatal mistake in a survival situation. A hundred pounds of rice only costs about a hundred dollars but could keep one person from dying FOR A LONG TIME when conventional food is not available.

The HARDEST THING TO FIND IN THE WILD IS HIGH CARB FOODS!
You can supplement rice with dandelion greens and berries and other wild greens and protein can be rabbit or fish (even tiny fish) or mice or rats or insects or squirrel, or racoon but you NEED the CARBS IN RICE because you WON'T CATCH ENOUGH PROTEIN AND FAT!
FAT makes up for lack of carbs in a keto diet!

I opened a can of tuna that expired in 2013 two weeks ago.

My keto lunch:

shredded lettuce
shredded spinach
shredded carrots
shredded red cabbage
one 5 ounce can of Starkist tuna packed in water
ranch dressing

all mixed together as a large green, tossed salad



My keto dinner:

Great Value frozen cauliflower (only $1 a bag)
Topped with a commercially produced, canned spaghetti sauce with ground turkey in it instead of ground beef
Buttered, boiled zucchini


Surprisingly, the cauliflower, kind of mashed up a bit, is a great substitute for spaghetti.

Someone adhering to a keto diet will refrain from eating sweet corn. some might eat a small amount of sweet potatoes with a generous amount of butter on top, while others would refrain from eating any sweet poato at all. Same thing with the beans - some will eat a modest amount of the beans (possibly topped with butter) while others will not eat any of the beans because of the carbs that are in beans.

Well I eat the three sisters. Squash, beans, and corn. When I do so I feel my best. Fish, lean meats, etc. also work for me.

Keep in mind that the varieties planted by Indigenous folk where not the genetically modified high carb stuff we see in stores today.
I see strawberries the size of my palm sometimes.
The blueberries are too big to feed my chickens.
This is Frankenfood anyway you dice it (no pun intended).

There are some non-genetically modified foods, seeds, plants, out there, just gotta know where to look for them. I was visiting a seed website recently and they had real mexican corn, as in the stuff that's been around for hundreds of years and still grown in mexico today. This variety is prone to the smut that they like and so much in mexico, etc.

Have you looked into Jerusalem artichokes? I don't know if they help with diabetes, but I have heard something about them being useful because of the inulin. I am sure there is plenty of info if you google Jerusalem artichokes and diabetes.

I have, or had, some growing in a patch in my back yard. Might look into increasing my patch this year.

Thanks for the videos, Packy! I'm going to use some of the recipes. So simple and easy, and can be made with what's already on hand in my pantry.

I'm a sucker for one pot or one pan quick meals. I have 2 cookbooks I use over and over for the meals. Not keto friendly, though. Every recipe only uses 5 or 6 basic ingredients.

The first cookbook is, "Incredibly Easy Minute Rice Recipes". I use regular white or brown rice. It's very easy to make the substitution from minute rice.

Second is, "Campbell's Quick and Easy Recipes". I have my pantry stocked with Campbell's "cream of everything".

I like to watch the YouTubes on cheap meals too and this one came up in my feed yesterday. I thought it was interesting because she used a Sam's $5 rotisserie chicken (they are large) and made it last for 4 dinners. Her budget for four dinners was $16.

I love their rotisserie chickens. I picked up a Power XL 8 quart air fried this past weekend at Sams club for $79, and plan to cook a lot of chicken in that bad boy! And make additional meals with the left overs. Last night I made chicken vegetable and noodle soup wit( my left over rotisserie chicken and a quart of home canned chicken stock, yum!

I love videos like 5his because sometimes I just get stuck in a rut and with a few simple ingredients can totally change things up menu wise.

Just starting on my Keto journey. I have weight to lose and am diabetic too (t2). Found Keto with Kristie and she has some great recipes, including budget meals.

I freeze my chicken stock and have been using frozen veges with the stock along with bacon bits and whatever else is around to make soups.I also throw some low carb noodles in with the veges. I got some cheese powder from Amazon and that helps a lot with flavor.
