TIP:Can't afford ebelskiver (danish "ball"pancake)pan?Use egg poacher tray"4 hole" teflon

I wanted to TRY Danish round (filled) Pancake balls and see if I really liked them, before I sunk money into a special pan,(Ebelskiver pan ) made to make that particular food.
The cast iron pan, with shipping, runs $18-30.

It occurred to me that I already HAD a lightweight, "4 hole", non-stick, EGG POACHER that you just set in a small skillet or pot of water to make poached eggs, and it occurred to me that I could just put that tray directly on the gas burner ON LOWEST HEAT, and fill the little cups almost full with pancake batter and "flip" them with wood skewers when the underside was cooked, before it burns. They burn easily, you have to watch closely.

I used a "just add water, complete pancake mix" but I "jazzed it up" with a scrambled egg, some milk, and water and threw in a tablespoon of bacon drippings.
I expected to just have round pancakes BUT MAKING THEM ROUND (instead of flat pancakes )GAVE A WONDERFUL, CAKE LIKE SPONGE TEXTURE TO THEM!
You need to find/use something that has approx two inch "cups" for each round pancake.

I cut them in half to eat and spread different toppings( honey, peanut butter, raspberry jam, molasses, maple syrup, marmalade) on them YUM!
I DO LIKE ROUND, DANISH PANCAKE BALLS! They say the Danes fill them with cooked? apple!
I have to try THAT and try filling them with cooked, rehydrated, raisins, prunes, and apricots too!

I bet I could use a Japanese takoyaki pan to make these...it looks identical except takoyaki is savory with octopus. Look yummy!

If you're lucky like I was my grandmother handed down the family Aebleskiver Skillet to me. If you're interested PM me and I'll share her from scratch recipe.
