This summer, I have canned much, much more than usual.

My goal was to keep as much out of my freezers as I could, while canning easy to fix meals .
Last Spring, my disabled adult daughter decided I was too busy around here and she would now fix the dinners. She enjoys cooking,
but has little experience and is unable to follow most recipes.
So, I began canning, water bathing and pressure canning cases and cases of chili, beef stew, Pineapple chicken, Chicken with
potatoes, Beef Stew, Chicken with tomatoes, Ground Beef with onions, Jams, Jellies, Fruit Butters, soups, broths, Marinara Sauce,
Creole Sauce, Sweet and Sour Sauce, Chili Sauce, Shirley Sauce, Applesauce. They amounted to about 1000 jars, pints and quarts.

In all that canning, I only had 2 jars not seal. New jars, old jars, new lids, boxes and boxes of older lids they made no difference. It was what I learned here: wipe the rims with vinegar instead of just a water damped cloth.
