Spanish Rice

I will provide the recipe for Spanish Rice that I have been making for years.
I have never tasted any better, even in mexican restaurants.

Try it.

2 cups uncooked long grain rice
4 cups canned chicken broth
2-3 Tbsp. olive oil
8 oz. Pace Picante Salsa either Mild-Medium-or Hot (your choice.)

garlic
cilantro

First, rinse the rice under running water until the water is clear. This removes the starches that make rice stick together.

heat olive oil in a frying pan and add about 1/2 cup small dice onion and a tsp. of minced garlic. Stir for about a minute then add the rice.
You want to cook the rice until it is lightly golden, not brown.

After the rice is cooked, add the Pace Picante sauce and stir until sauce is absorbed.
Add the chicken broth and another 1/2 cup of onions.
Stir until the broth is dispersed evenly in the pan, turn heat up and let it cook uncovered.
After a few minutes you will see steam bubbles appearing on the surface of the rice.
Lower heat to simmer, and cover.
Cook for about 10 minutes until the broth is absorbed.

When liquid is absorbed, remove from heat, .

Chop cilantro and sprinkle over rice

Serve.
