Southern Cornbread Dressing ( stuffing)

My southern hubby loves this cornbread stuffing recipe I make for him.


Corn Bread dressing(stuffing)

4 pieces white bread in chunks
1 prepared cornbread ( 9 inch) crumbled ( NOT SWEET kind)
( I use Martha white self rising corn meal recipe: added at the bottom of the page)
3 cups chicken broth
1 tsp. sage
1 /2 tsp. pepper
1 medium onion, diced
3 stalks celer, sliced and diced small
2 eggs, beaten.

Saute onions and celery in margarine until tender
Combine all ingredients except broth, and spread in a large baking pan.
Pour broth over mixture in pan.
Bake at 425F for 35 minutes.

2 cups self rising corn meal mix (Martha White)
1 egg beaten
1 1/3 cup milk
1/4 cup oil or melted shortening

Heat oven to 450 F. Grease 9 inch cast iron skillet ( or 9 inch sq. pan) Place in oven to heat. In large bowl, combine all ingredients and mix well. Pour batter into hot greased pan. Bakefor 25 to 20 minutes or until golden brown
