Roasted Pumpkin Seeds

The toddler and I have spent the morning making a Jack-O'Lantern. She refused to put her hand in at first, but eventually had fun getting "pumpkin guts" on her hand - LOL.

Anyway, to complete the morning, I saved the seeds and thought I'd roast them.

I've found a couple of recipes online, most say to mix them with olive oil or butter, or to brush it on them, but they all have oven temps ranging from 200 degrees up to 350 degrees, with times from 45 minutes to an hour and a half (and in some cases the high temps go with the long times - it doesn't make sense).

I have some sea salt to put on them - thought I might put some Season All on one tray of them and just plain salt on other.

If any of ya'll have suggestions as to oven temp and time they should stay in, I'm all ears.

We're getting ready to start cutting ours now. Last time we roasted them I let them soak in salt water over night. Put them on papertowels to absorb the paper then put them on a lightly oiled cookie sheet the next day. We add seasalt usually and roast them really slowly. 230-250 maybe for as long as it takes to really dry them out. I've added garlic salt and cayanne pepper before as well as just some cajun seasoning. Whatever floats your boat, or pumpkin seeds!

I just oven roast them on an ungreased baking sheet, bake at 350* 8-10 min. stirring them ocassionally. 'Til their golden brown, keep an eye on them to prevent scorching. Or you can do the same in an ingreased skillet over Med. heat 3-4min. I lightly season, sprinkle with what ever you fancy:)

I do basically what ARUBI does... I salt before roasting and let it dissolve into the "pumpkin liquid", never add any oil or butter, it doesn't need it IMO.
