this is one of the tastiest and easiest soups i've ever made
it freezes well, so it's a good idea to make a double batch, and freeze the leftovers

Kettle Soup

6 to 8 strips of bacon (fried crisp, then crumbled)
2 cups ham (cut into 1 inch cubes)
1 small onion (diced)
1 large can (30 oz.) whole tomatos (cut up)
1 1/2 large tomato cans full of water
1/2 teaspoon italian seasoning
1 16 oz. pkg of frozen mixed vegetables
1 cup minute rice

fry the ham cubes in the bacon grease till they start to brown a bit.....then add the onion and cook at low heat till the onion gets transparent

drain the excess bacon grease off, then add the cut up tomatoes, the liquid from them, one and a half cans full of water and the italian seasoning.... and simmer for about an hour

add the frozen mixed veggies, and simmer for another half hour

add the minute rice and simmer for 10 minutes

(i usually don't add any salt, cause of the bacon being salty.....but you can add a little [or some granulated chicken bouillon] before adding the rice if it's not salty enough)

I've never used minute rice, so I'm gonna try this with plain old white rice and just add it in when I start the one hour simmer. I'll let know how it comes out. Just got 8 packages of thick sliced bacon for $1.48 a pound yesterday so I've got all the ingredients.

i think you're gonna be pleasantly surprised!
i have yet to serve this to anyone who didn't love it

i ususally use a little more bacon than is called for in the recipe, cause i like bacon so much...but be careful not to add too much so it doesn't get too salty

i also find it easier to cut the bacon in pieces before i fry it off......that way i can make sure that all of the pieces get crisp and don't end up too mushy......and then i lay them on paper towels, cover with more paper towels, and "roll" them up and squeese them so that i get ALL the grease off that i can
(i do this often with bacon, and then store any extra in the fridge in a baggie.....makes it handy for salad toppings or instant BLT's)

i haven't ever used regular rice in this soup, but i bet it would work fine
you could even use already cooked rice (either white or brown....or even wild!)

I'm gonna call my DIL and ask her to post her BLT Dip recipe for you. If you love bacon you'll love. Thanks for the tips. I do use kitchen sheers to cut up the bacon and paper towels, but had not thought about the ring it bit. Good tip.
