Crash Test Dummy
This one took a while to get right. I hope you'll like my end result. My family does. Make sure to serve it as soon as the last ingredient is added for the best flavor.
2 heads romaine lettuce
2 eggs
2 garlic cloves, minced
4-5 anchovy fillets, mashed
4 tablespoons olive oil
1/2 teaspoon black pepper
3 tablespoons lemon juice
1/2 teaspoons Worcestershire sauce
1/3 cup grated romano cheese
2 cups croutons
Wash the romaine and dry, discard outer leaves leaving only the lighter green portions of the lettuce. (Save the outer ones for sandwiches, tacos and such.) Coddle the eggs by cooking them in boiling water for 1 minute. Remove the eggs from the water and place in a covered bowl for use later. Rub a large glass salad bowl with the garlic and then the anchovy. Leave a small amount in the bowl if desired. Break the romaine into bite size pieces with fingers. Do not use a knife to cut the lettuce, this will bruise the leaves. Place in the bowl and add the remaining ingredients making sure to toss and turn the salad briefly after each addition to the bowl. Add the ingredients in the following order: olive oil, pepper, coddled eggs, lemon juice, Worcestershire sauce, romano cheese and croutons. (Serves 4)
