[rec]Baked Oysters

3 dozen - oysters
12 to 16 ounce package of bacon
1/4 cup shallots, chopped (or 1 small onion)
2 garlic cloves, pressed
1/4 cup celery, diced
2 tablespoons parsley flakes or 2 teaspoons dried
1 cup asiago cheese, shredded
1 cup mozzarella cheese, shredded

Scrub oysters and discard any that do not close completely when tapped on with fingers. Shuck the oysters, remove the inside, and place on inside of one rinsed shell half. Cut the bacon with a scissors into 1/2 inch pieces and cook until just beginning to brown. Remove bacon from pan and drain on a paper towel. In the same pan add to the remaining bacon fat in he pan the shallots, garlic, celery, parsley, and cheeses. Heat until cheese has melted. Add the bacon, stir in well and remove from heat. Put a heaping tablespoon or so of the mixture on each oyster half. Bake at 425 degrees for 10 minutes in oven on a bed of rock salt placed in the bottom of a cookie sheet. Serve with lemon wedges and Tabasco. ( Makes 3 dozen)
