3 dozen - small clams
1/2 cup (1 stick) butter, melted
2 garlic cloves, minced
1 cup seasoned breadcrumbs
1/4 cup Parmesan cheese
1/2 cup (1 stick) butter

Make paste from the melted butter, garlic, breadcrumbs and cheese. Roll this mixture into a log about as wide as the clamshells and refrigerate until solid, about 2 hours. Scrub clams and discard any clams that do not close completely when tapped on with fingers. Open the clamshell, remove the clam inside, and place on inside of one rinsed shell half. Put 1/4 inch slice of the solid paste mixture on each clam half and add a thin pat of butter on top of each from the remaining stick of butter. Bake at 350 degrees for 10 minutes in oven or until lightly golden on a bed of rock salt placed in the bottom of a cookie sheet. Serve with lemon wedges and Tabasco. (Makes 3 dozen--Serves 8 )
