When I lived in Arizona, my neighbors had prickly pears and didn't want them, so they let me have them to make jelly. Here is the recipe I used. It's about 30 years old.
Prickly Pear Jelly
Cut fruit in half and burn off stickers.
Boil.
Drain in jelly bag overnight.
3 cups juice 4 1/2 cups sugar
1/2 cup lemon juice 1 pkg powdered pectin
Measure juice in saucepan and mix in pectin.
Bring quickly to a hard boil.
Stir in sugar all at once.
Bring to full rolling boil.
Boil hard for one minute, stirring constantly.
Remove from heat and skim off foam.
Pour into prepared glasses.
Makes 6-7 jelly glasses.
As I remember, it tasted very good. I always thought it was a lot of work, but I didn't have anything else to do back then. Plus it was something different than we have in the midwest.
