Pork Pork sales

Pork is on sale at most stores for New Year's. We take advantage of this every year to stock up our freezer. This year we found whole pork loins for $1.48 per pound. All you need is a sharp knife to process. Our loin was about 9 lbs. First we trimmed off most of the fat. We left a small layer of fat on the top. Next we cut off the ends and sliced them for country style pork for cooking with our sauerkraut. Next we sliced some chops about 3/4 inch thick. Then we made a slice about 3/4 way down the middle and stuffed with stuffing. We also sliced a few meals of boneless pork chops. We freeze all of this and get many meals for the two of us. The cost is less than 50 cents per serving for the meat!

To cook the stuffed pork chops put them in a baking dish, salt and pepper them and add gravy over the chops. Cover and bake at 375 degrees for about 45 minutes. You can skip the gravy if you prefer it that way.

To cook the country style pork, I put them in a crockpot with sauerkraut and some hot dogs.

To cook the boneless chops you can season them and pan fry in a little oil.
