Recipe Panera Broccoli Cheddar Soup...copycat recipe

I've been hanging onto this recipe for a while, intending to make it when the weather was right. Today was the day. I found it on this video a while back and we all loved it. I copied and pasted the ingredient list below and it is out of order but accurate for the video. If memory serves, this is every bit as good as Panera's and maybe a little better.

I will do some tweaking the next time I make it. Since this is a full meal for us, I'm adding a little shreaded chicken. I meant to do it tonight and forgot. Also, you really do have to be careful about overheating the cheese or it will seperate. Per directions, I added it after everything else cooked and it was off the burner but it still showed sings of slightly wanting to seperate...I mean just the tiniest bit. A little bit of sodium citrate would fix that and give it a much creamier texture but that darn pain in the booty sciatica caused me to not want dig through the pantry to find it. Another thing, it calls for a quart of half and half. Next time I'm using milk instead and adding a little corn starch to make up for the fact that milk is not as thick as half and half. I honestly think it will be an improvement...a little less rich.

I bought a loaf of French Bread to slice and toast to go with it but forgot about it and made a pan of corn muffins lol.

Broccoli Cheddar Soup Ingredients:

1/2 C Butter
1 diced onion
1 minced garlic clove
1/2 C flour
4 C chicken broth
24 oz. shredded cheese
1 qt. half n half (or 2Cs milk + 2C Heavy cream)
3 grated carrots
1 lb broccoli florets chopped
Salt/pepper to taste
Pinch (less than 1/8th tsp) cayenne

I may try this with vegetable broth for my housemate. I usually hate broccoli, but I can abide it with cheese or in soups.
