It's 70 degrees and beautiful!

We were approved for the sweet little house! So happy right now! We don't move until the end of the month... Easter weekend! At least now I know what to plan for. I am excited!

Dinner will be chicken and broccoli Alfredo

How about you? Share a square or just "What's for dinner?"

I am so happy you got your house! It is in the 70's here today, a bit overcast but with some peeks of sunshine. I have been trying to clean up around here and working on clearing the fence line in the garden, never ending chore! Dinner is hamburger patty, fried potatoes and deviled eggs.

It's still briskly cold in the Pacific NW. Yesterday my dog walk ended with falling tiny snow balls. I drove my RV to the gas station just to get it warmed up for the month. For dinner, I'll have mahi mahi, plus broccoli and a salad. Blew my carb allowance already with blueberry pancakes at breakfast.

It was partly sunny and 70ish this afternoon in middle Georgia
Cut some sweetgum logs into 4" slabs on my little hobby sawmill
Supper was pork roast--sweet potatoes and cabbage
dessert was a left over Krispy Kreme doughnut

Grats on the new home!

We're on the 3rd or 4th day of off-and-on-again rain here, so I probably still can't get out into the garden. Lots of niggling things to do indoors anyway, though (laundry, ironing, dishes, cutting up cardboard boxes, boxing donations, whatever), and I am also trying to do a few things for myself.

DH is desperately hoping that his favorite Thai restaurant will be open tonight (after being closed for some days, probably because the owner's son, a senior in high school, is auditioning at various universities to be accepted as a music major, so dad has to travel). So dinner tonight is either Thai takeout (if DH is lucky - he wants his Thai iced tea!), or else sous vide pork chops with roasted potatoes and asparagus, with leftover cheesecake (which DH got earlier this week) for dessert.

On a side note, I experimented last weekend with making a hybrid keto pound cake. Hybrid, in the sense that I added some carbs to the pound cake, and DH insisted on real sugar for the glaze. I used the King Arthur's keto muffin mix https://www.amazon.com/dp/B0B4169MH7?psc=1&ref=ppx_yo2ov_dt_b_product_details, followed their directions and used 5 eggs for a pound cake, added about 1+/- tsp of lemon extract, and 1 cup of frozen/thawed wild Maine blueberries. For the glaze DH used powdered sugar and Galiano, maybe with a bit of vanilla extract too.

It turned out pretty good, you couldn't tell at all by the taste that it wasn't a "real" pound cake (though it was lighter in texture), so I bought two more boxes of the muffin mix, and am thinking of new variations to try - maybe a chocolate pound cake with some chocolate chips and a Kahlua glaze, and maybe an orange pound cake with something or other added.

(Yes, I know that there are now tons of Me Too Keto recipes out on the web, but I am both lazy and have too many things to do to want to bake from scratch. (But I have an unquenchable sweet tooth and must have SOMETHING to satisfy that craving.) King Arthur has been reliable for quality in its other products so I took a chance on their mix, and I'm pleased with this first result. And the pound cake had non-keto things added to it because plain old pound cake is boring.)

How lovely Seabird, very happy for you!
I’ve got a lovely chuck roast in the oven with my home-grown garlic, carrots and onions…a moose is browsing my back yard for her favorite willows…the red polls and gros beaks and nuthatches are going crazy on the seeds I set out for them…and the hurricane winds we have had without let-up for four straight days and nights…are finally still.

A sweet day of respite and a wonderful week of work ahead! <3

DH and I have had a busy weekend cleaning out closets and switching a couple bedrooms around. The weather was so nice today! I'm not sure how warm it got but the backdoor and one window was open to let the nice outside air blow through.
I had a hankering for chicken livers. DH went to the deli at the local grocery store to get some but they didn't have any cooked up. He came home with a container from the meat dept. instead. I rinsed them, cleaned them up, wrapped those babies in bacon and baked them in the oven. So good! We had left over potato salad with them. An easy dinner to wrap up a busy weekend!
