Happy Saint Patrick's Day! It's 80 degrees with a white clouded blue sky!

Spring break is over for us and it's back to the wood pile! It's been a blessed week and very productive.

We have 2 weeks left before the big move, 8 days from getting the keys to the new house. So, needless to say it's been crazy busy. I am moving because I needed to reduce how much it costs to live, and in the effort to go down to just one job. I am praying it turns out as I hope. The hardest part is that I still am working the second job and trying to pack for the next weeks. It's been a crazy couple of months. :lol: But it will be over soon.

Dinner will be sweet and sour chicken over pasta.

How about you? Share a square or just "What's for dinner?"

As for dinner, I think just some linguini or fettucini with meat sauce, and a salad.

It's a rainy, dreary, and coolish day here for us. No plans to do anything but lay around and be lazy. We have books to read and soccer games to watch.

I put a beef chuck roast in the crockpot and made onion gravy to pour over it. That's cooking. I'll have mashed potatoes, purple hull peas, slaw, bread and butter pickles, and cornbread to round out our meal. Homemade warmed peach cobbler with vanilla ice cream for dessert.

eta. I made biscuits instead of cornbread.

Kinda overcast here and a lot to get done! Making soup and some coffee cake for our big meal at lunch (since we slept late, OK I slept late - lunch may be around 3 pm!). Soup is leftover veggies from corned beef yesterday, kielbasa, beans, and stuff from the fridge. Coffee cake will use some plums I canned a while back.

It's gloomy here in the high desert but kinda nice. I also have a chuck roast in the slow cooker along with carrots and I used beef bone broth to cook in with bay leaves on top. Will add potatoes later. Also still have to make coleslaw and finally throw together some biscuits.
I am happy to say DH is eating really well and his new nurse is great.

Cool and sunny here today. We are having what we always do on St. Patrick's Day: corned beef, cabbage, and whole peeled potatoes simmered all day in the slow cooker. My mother always called this New England boiled dinner. Actually, I add the cabbage, cut into wedges, the last hour of cooking so it doesn't turn to mush. Irish Soda bread on the side.

Didn't sleep at all last night then slept til 1 this afternoon. Raided the freezer for Chili for DH and pasta for me. Friend makes a to die for pasta sauce with hamburger, sausage, squash, mushrooms and all sorts of stuff in it. DH doesn’t like it so I eat it when I get the chance. Leftover pineapple dump cake for dessert.

It's a nasty, bitter day outside - probably around 20, a screaming north wind, and spits of snow enough to be annoying. Just came in from "last call" on chores, and the wind plus cold about sucks the air out of your lungs. The power has been blinking for the past two days, but so far hanging in there.

Supper was wild rice hotdish and steamed asparagus. Didn't do anything special for St. Patrick's Day, (even though being a good bit Donegal Irish) except taking two fingers of Bailey's to warm up my innards. :lol:

Everyone's dinners sound so good! For St. Paddy's day I usually make a corned beef brisket, cabbage and corn bread. Last year I even made Irish soda bread. This year I wanted to try something different since my Irish DH is not a big fan of corned beef. I made bangers and mash instead with a side of brussel sprouts fried in kerrygold butter and minced garlic. DH loved it!

We are having a sun storm in the upper left corner of the country. 73 degrees at the Ides of March is not normal so I thank El Nino for that. By next Wednesday back to the usual 50 degrees and raining

With the knowledge of what is ahead the charcoal grill made an early appearance this year so surf 'n' turf it is. Sockeye and sirloin on the grill with roasted bell peppers, bearnaise sauce over all of it.

I took a drive with the windows down in mid March...I can't believe it!
