It is a beautiful day, 74 degrees, sunny skies with a dash of a breeze!

Spent last evening watching the news. It was nuts watching the Middle East go crazy. Prayers continue for the answers. The Lord is on it!

We had tornado's touch down this week near my work. EF1's, which is not the worst, but most of the time in Florida, they are EF0's. Many of the families of the children I teach were deeply effected. We had near a hundred children sitting in the hallway for 45 minutes during the tornado warnings. Trying to keep them calm and happy was a challenge. We sang our hearts out! LOL! The school only had a little effect from it!

Dinner will be stuffed shells and a new batch of pasta sauce.

How about you? Share a square or just "What's for dinner?"

Good Morning or afternoon Seabird.
Our weather here in the desert is crazy! 88 a couple of days ago and now 50 with the wind blowing off the snow. I switched back to heat.
Tonight I'm having halibut, macaroni and cheese and veggies of some kind. Neighbor brought us cranberry and orange scones so had them for mid morning snack.
Hope the disasters slow down for everyone and next week is better.

The water is finally receding from all the flooding we've had. It's a beautiful sunny 83 degrees, today.

I have a smoked, boneless, half ham in the oven right now for tonight. Along with it, we'll have pinto beans, steamed and buttered/parslied potatoes, with garlic rolls. No dessert. Glasses of cab sav, later.

Gloomy and humid again. There was some sunshine in the early morning.
Much rainfall last two days. Sprinkling now. Grass has begun to spring to life and trees are budding.

Sliced up Italian sausage, browned and crisped up in a frying pan with bacon grease.
Jasmine rice cooked with salt and bacon grease.
Put both in a bowl and added generous spoonful of Dakin Farm honey mustard.
Satiating!

Sunny, but the wind is starting to kick up. I've spent the morning working outside and DH is working on a water issue that involves a beaver. Sigh. Lunch (our big meal of the day) will be leftovers, because that's what I've got in me. I did make a 'Kansas kid' cake (peanut butter cake with chocolate/peanut butter crumble top).

I made a pot of chicken corn soup for dinner. It's an old childhood favorite. All it really is is a pot of homemade chicken noodle soup, with big & fluffy egg noodles, and a ton of canned corn mixed into it. The chicken was leftover from previous meals. I seasoned the broth well with garlic salt, black pepper, and Italian seasoning. It's a favorite among the Amish in Lancaster & Chester counties in Pennsylvania where I grew up. It will be too hot to cook anything like that soon. I also need to make some split pea soup and some lentils before the heat arrives, and freeze the extra for lazy days.

I love split pea soup!! I make a mean one, too lol…people ask for it :)

Sunny and 80 here today, so I decided to break out the Sun Oven. I made a loaf of sourdough bread, baked in the solar oven, followed by a pot of vegetable beef soup, simmering now in the solar oven. That's what is for supper tonight. DH and I have been working outside all day, so it's nice to have a meal that slowly cooks itself. :)

81 here in W. KY, Supper was Wild Turkey Breast cut into chunks, seasoned and fried, jalapeno pimento cheese balls, home made macaroni salad and tater salad, cause that's what hubby wanted. The turkey breast I killed Saturday morning, my first ever, 10" beard, 1" spurs and weighted in at 21.13lbs. I used a 16 gauge and it was awesome.

Warm here.
Dinner was spiral ham, green beans and mac and cheese. We had the same thing last night and will enjoy the ham again for dinner Tuesday as well. It will still leave us a few pounds of ham lunch meat. (It was purchased at .99 a pound and was in the freezer). Delicious.

On TB every waking moment
Post rainstorm here - too wet to work much in the garden. Did manage to fertilize the lawn before the storm.

Temp is 61 and will climb into the 80s by the end of this week. Have been getting all the berries & grapes corralled & trained. I swear I will get my tomatoes & squash planted in the raised beds this week.

Teriyaki beef & broccoli over rice for dinner. Will be on left over clean up for another week.

Life is better in flip flops
A beautiful sunny day here with a high of 81. DH had to work so I spent the day with our fur baby :) Yesterday was nice too just a little windy. It was also our youngest grandsons birthday and DH took a vacation day for it. We took him and his brother out for the day to a museum and lunch then birthday cookie with ice cream and gifts with his parents after we got back.
For dinner tonight we had mesquite pork tenderloin, mashed potatoes, zucchini and a fruit salad for dessert.
I pray everyone has a blessed week!

Don't screw with an engineer
Sundays are a "one cook" day for me, because it's hours. I usually cook dogs supplemental food on Sunday, so I cook one big dish for us to have for lunch and supper.
Today was a massive pot pie, with ground turkey, peas, carrots limas and mushrooms. Regular pie shell on bottom, puff pastry dough on top. Pastry dough didn't work well on bottom last week, it was doughey even after browning and poking to eliminate pockets. Today's was good. I really wanna figure out how to do pastry dough on bottom, the flakiness would be great.
Prepping to cook a big pot of pinto beans, cornbread and greens early this week. Since I'm now unemployed, gotta save some bucks. Good thing we love beans and greens! :D

Worked today at the C-store. Sadly, it kind of turned out to be a "Breaking Bad" deal with a guy in a busted ass camper deciding to camp on the store's property without permission. We had state PD, sheriff's dept, and local PD to get him out of the area. Said camper will be back to "get us" since we are all racist and I'm rude. LOL!!! Yeah, people are crazy.
Dinner was chicken tenders and tater tots with honey mustard on the side.

@agmfan3. What are jalapeno pimento cheese balls?? I usually just make the chees spread with diced jalapenos. Do you deep fry the balls?

Looks like mac & cheese was a theme here today!! I'm thinking I need to make my bacon mac & cheese next week.

Today was bunless burgers with the fixins and sweet potato fries in the oven. Rainbow sherbet for dessert. (I'll be glad when it's gone, I don't like it!)

@Peachy I just use store-bought noodles. I usually cook them separate from the broth, then add them in when they are nice & done, tender. They get nice & fluffy as they soak up some of the broth. If you can find them, there are noodles that are called 'pot pie squares'. They cook up nicely like the outside of a ravioli or pierogi. They are also very tasty in this soup.

Really, though you could use just about any kind of noodle you like, I think. Egg noodles & the pot pie squares are traditional around here, but I think gnocchi, fettuccini, or even just plain old elbows would work great for it, too.

Thank you Lad. I'll have to look for the "pot pie squares". I usually use the egg noodles but they've recently changed.

I've noticed that change as well. The last few times I bought them, they were more difficult to get all the way done. They require much more cooking than they used to.

I gave up on putting pastry on the bottom of "pot pie" years ago. I just make mine like shepherd's pie, only it's up to my whim and available resources what I use on top. Pie crust, biscuit batter, cornbread batter, or the traditional mashed potatoes. Don't need the extra carbs of a bottom crust anyway, and as long as you let the pie (or casserole or 9x13 Pyrex) rest 10-15 minutes before cutting, the pieces come out well intact to serve.
