IIRC there is a free ebook on Amazon for veggie burgers, and loafs. It's been a long time since I downloaded it though so don't remember the name of the book at the moment.
I've stocked up on lentils, knowing that at .98/lb they are one of very few staples available under $1/lb, here. Others are wheat flour, corn meal, rice, yellow (.88/lb) and green (.96/lb) split peas, and Great Northern (.89/lb) beans. Black beans have just about doubled in price this year, and some other types are approaching $3/lb. As one of very few people who buys dry beans in my area (excluding the markets that sell to the hispanic/latino communities), many bags of beans would literally collect dust. Up until this year. It's August, and WalMart cannot keep split peas on the shelves. Last year, nothing moved for about 9 months of the year.
With all of these lentils on hand, I'll be looking for recipes for lentil loaves, burgers, lasagna (lost a really good recipe), etc...
