Recipe Homemade mayo

1 egg yolk
1 tbls lemon juice
1 tsp yellow mustard
¾ Cup give or take vegetable oil
salt and pepper

Mix gently all the ingredients except the oil in a blender or food processor.
On low speed drizzle the oil in till it is emulsified and thick.

I actually use mustard powder interchangeable with mustard and it's actually a little better. Keep in mind you can add some garlic, cayenne , substitute olive oil for regular vege oil. Experiment is half the fun.
It will all change the taste a little.
