Food Holy Grail of Fat Head Pizza

I've tried the cauliflower pizza crust recipes and I thought it was pretty good. However, I've been using this recipe and it's the best so far. This recipe is versatile in that I used it to make hamburger buns. DH was thrilled because the bun didn't disintegrate when eating it. I have also used it to make just plain garlic bread to have with soup. Lots of different ideas just using the dough.

Ingredients

1 3/4 cups pre shredded/grated cheese mozzarella is the best or Edam/mild cheese
3/4 cups almond meal/flour
2 tbsp cream cheese
1 egg
pinch salt to taste
1/2 tsp dried rosemary/ garlic or other flavorings optional
your choice of toppings such as pepperoni peppers, cherry tomatoes, olives, ground/mince beef, mushrooms, herbs etc

Instructions

Mix the shredded/grated cheese and almond flour/meal in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.
Stir then microwave on HIGH for another 30 seconds.
Add the egg, salt, rosemary and any other flavourings, mix gently.
Place in between 2 pieces of baking parchment/paper and roll into a circular pizza shape (see photos above). Remove the top baking paper/parchment. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.
Make fork holes all over the pizza base to ensure it cooks evenly.
Slide the baking paper/parchment with the pizza base, on a baking tray (cookie tray) or pizza stone, and bake at 220C/425F for 12-15 minutes, or until brown.** (see my comment below)
Once cooked, remove from the oven and add all the toppings you like. Make sure any meat is already cooked as this time it goes back into the oven just to heat up the toppings and melt the cheese. Bake again at 350 for 10-15 min.

**I don't bake the dough at that high of temperature. I bake mine at 350 degrees for 15 - 20 minutes. Be sure to use parchment paper and spray it with oil before putting the dough on the parchment paper. I don't roll the dough out with a rolling pin. I use my fingers to shape the dough on the pizza pan. works well and one less thing to clean up. Also, when mixing the egg into the flour mixture, I use my hands to incorporate the egg into the cheese flour mixture. Works well. It will be sticky but washes right off with soap and water.

I made hamburger buns out of the dough yesterday. I used my fingers to shape the dough then used a plastic circle like from a coffee can top for my pattern. I also sprinkled sesame seeds on top and baked them at 350 for 20 minutes. They turned out perfect, and they don't fall apart like some hamburger buns do. DH really liked it and said it was better than the real thing. There will be left over dough so I rolled them into balls, sprinkled them with some garlic powder and baked them on a cookie sheet. They come out flattened which is okay. I ate them for breakfast with some egg salad on top....open faced sandwich.

YES YES...fat head dough is excellent. My DH was diagnosed with diabetes May 14 so, needless to say our way of eating changed...low carb/high fat and protein. He has lost 35 lbs and I have lost 10. The fat head dough is a life saver. I am going to try cooking it as you suggested, at a lower temperature.
