Baking Don't these sound good?

After looking at innumerable diets, and trying a few eating plans, and getting a bit tired of all things low-carb....I'm going back to basic home cooking and traditional tasty foods. I even served a side of black beans with dinner this evening. So far, neither one of us has blown up, or keeled over. (I can't eat wheat without dire problems, so there will still be some substitutions, but will adapt.)

Here's the thing: If basic home-style cooking hasn't killed off all the 100+ year olds in the Blue Zones yet, it probably won't kill me. I have everything called for here but the oats. Might walk down to the local grocery for some, and bake these this evening. (and walking more is a basic Blue Zone longevity activity.)

Gluten Free Almond Flour Oatmeal Chocolate Chip Cookies
Makes about 2 1/2 dozen

INGREDIENTS
2 cups rolled oats
1 cup Barney Bakery Almond Flour
1/2 cup coconut flakes
2 tsp cinnamon
1/2 tsp sea salt
3/4 cup maple syrup
1/4 cup coconut oil (melted)
1 tsp vanilla extract
3/4 cup semi-sweet or dark chocolate chips
3/4 cup toasted walnuts, chopped (optional)
DIRECTIONS
Preheat oven to 350 degrees
Combine all dry ingredients (minus the chocolate chips & walnuts) in a bowl and mix.
Combine all wet ingredients in a bowl and whisk together.
Add dry ingredients to wet ingredients, mix well.
Stir in chocolate chips and walnuts.
Use a cookie scoop or spoon onto a parchment lined cookie sheet. Flatten cookies slightly.
Bake about 15 minutes or until golden brown. Let cool 10 minutes. Enjoy!

Those do sound good! Like you, I've been eating low carb for so long I'm tired of it. I've brought back a few carbs, and still haven't gained any weight. A few sweets from time to time, too. I do need to do more walking, though.

Faroe have you tried organic wheat or organic spelt? You probably have but I thought I'd check as a lot of people who don't test celiac can handle some limited amounts of organic wheat/durum/spelt/Kemet etc.

Yeah, I should. The safe grain problem seems to get ever murkier. I was on Bob's Red Mill site recently, and it stated that the company can NOT guarantee that their products are't contaminated with glycophosphate (Roundup), which could be my problem too, ...don't know. Apparently the rumor of spraying the standing ripe crop in the field to speed drying is absolutely true. The chemical has been detected in oats as well. It is possible to buy certified glycophosphate-free grains, but that testing for consumers is only just beginning to get established. We'll see. I'll have to go slow. Been busy, and haven't made the cookies yet. I'll definitely cut the sweetener WAY down - I've never cared for really sweet cookies.

Made them this evening.
Meh...
I'm not that fond of chocolate chips - BF wanted them included.
I added an egg. Why was one missing? Doesn't every cookie recipe call for an egg?
I also used a smaller amount of brown sugar to replace the expensive and very sweet maple syrup. The pic on the site showed very flat cookies. I like my cookies to have some height, so I added 1/2 tsp baking powder. Then, the mix was rather dry, so I added some milk. Also cranberries.

Finally, I accidentally set the oven at 450F instead of 350F (second time I've made that mistake recently, and I don't know why). Caught it in time, but the bottoms were slightly burnt. Only baked half the recipe. The rest is in a log in the freezer.

Ok, I can't really fault the recipe, but am just not that excited about them anymore.

I made a batch I thought were much better. They are not sweet at all, so that would be a matter of taste.

Cranberries
blueberries
walnuts
1tsp vanilla
two eggs
about 2 Tbl butter, softened
5 Tbl psyllium husk
1 1/2 C almond flower
1/2 C coconut flakes
1/2 t baking powder

I think that's all....again mix up and 350F oven.
