After looking at innumerable diets, and trying a few eating plans, and getting a bit tired of all things low-carb....I'm going back to basic home cooking and traditional tasty foods. I even served a side of black beans with dinner this evening. So far, neither one of us has blown up, or keeled over. (I can't eat wheat without dire problems, so there will still be some substitutions, but will adapt.)
Here's the thing: If basic home-style cooking hasn't killed off all the 100+ year olds in the Blue Zones yet, it probably won't kill me. I have everything called for here but the oats. Might walk down to the local grocery for some, and bake these this evening. (and walking more is a basic Blue Zone longevity activity.)

Gluten Free Almond Flour Oatmeal Chocolate Chip Cookies
Makes about 2 1/2 dozen
INGREDIENTS
2 cups rolled oats
1 cup Barney Bakery Almond Flour
1/2 cup coconut flakes
2 tsp cinnamon
1/2 tsp sea salt
3/4 cup maple syrup
1/4 cup coconut oil (melted)
1 tsp vanilla extract
3/4 cup semi-sweet or dark chocolate chips
3/4 cup toasted walnuts, chopped (optional)
DIRECTIONS
Preheat oven to 350 degrees
Combine all dry ingredients (minus the chocolate chips & walnuts) in a bowl and mix.
Combine all wet ingredients in a bowl and whisk together.
Add dry ingredients to wet ingredients, mix well.
Stir in chocolate chips and walnuts.
Use a cookie scoop or spoon onto a parchment lined cookie sheet. Flatten cookies slightly.
Bake about 15 minutes or until golden brown. Let cool 10 minutes. Enjoy!
