It is always solid at room temp (which is confusing; calling it an "oil"). But if you buy the deodorized type, it won't have any coconut taste or smell. It's like Crisco, basically... the healthy, original version!
I don't know whether to laugh or cry... my mom was one of the original health nuts... Adele Davis fan, but also very influenced by the "standard advice " in terms of eating whole grains rather than bleached, white flour... but also believed saturated fats were poison, but used tons of Crisco in her frequent baking. She avoided coconut oil the most vigorously of all. When she discovered it was in "soft serve" ice cream, which we loved as an occasional treat, we were never allowed to eat it again.
She blended butter with sunflower oil (made it spreadable and you could keep it at cool room temp for a few days)... because "it was healthier "...
BUT! She avoided margarine like the plague!
She also thought too much sugar was deadly, and I can't say she's wrong! But when my dad was sinking into deep alzheimers, she wouldn't bake cookies or anything, because "it's not good for him". Practically the first thing he'd say to me when they visited was "do you have any cookies?". She also cut him off coffee because "it's unhealthy " Turns out... it actually helps slow down the progression of alzheimers!
