For those prepping beef supplies...Northeastern California - Safeway is selling chuck roast to members for 3.99/lb if you buy 6 lbs or more. Savemart is selling chuck roast for $3.49/lb in Maxx Pack (2 or more). Stock up while you can. I just bought 3 chuck roasts (about 10 pounds), vacuum sealed and froze them for later. Eventually, I will prepare each one with this recipe, which the family and friends rave about when I prepare it.

My recipe modifications...
I use Swanson Beef Broth instead of water.
I use 1/8 teaspoon of black peeper, rather than the pepper corns.
I use 1/8 teaspoon ground cloves instead of whole cloves.
I usually double the carrots.
I sometimes leave out the turnips, and if not making mashed potatoes separately, I will add potatoes.
I make gravy out of the flavored stock and freeze any leftover stock/gravy for later use.

1 teaspoon salt
1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
1 bay leaf
1 clove large garlic, cut into fourths
6 whole cloves
5 peppercorns
4 cups water
4 medium carrots, cut crosswise in half
2 medium onions, cut into fourths
2 medium turnips, cut into fourths
2 medium stalks celery, cut into 1-inch pieces

French-Style Beef Roast

Ingredients

Directions:
Place beef roast, salt, thyme, bay leaf, garlic, cloves and peppercorns in 4-quart Dutch oven add water. Heat to boiling reduce heat. Cover and simmer 2 1/2 hours. Add remaining ingredients. Cover and simmer about 30 minutes or until beef and vegetables are tender. Remove beef cut into 1/4-inch slices. Serve vegetables with beef.
