I use Pesto sauce, which is green. It is made with basil, olive oil, and nuts. I have made it from scratch once, but usually buy it in a jar. It is good with chicken and pasta.
There is also a Mexican green sauce based on tomatillos. I'm not terribly fond of it, but some people are.
In Colorado, there is something called "green sauce" that is wonderful. It is actually made of some pork and some mild green chiles. It is a regional favorite.
I prefer the green taco sauce....I buy the Victoria brand which is sort of mild. I like it on my baked potatoes with sour cream, on scrambled eggs and any Mexican dishes, incl. Taco salad. (I don't mix it in....just drop some sauce on the various dishes. I don't like red sauce.
