I Have a good amount of canned chicken in my preps pantry. I am sure, in the right circumstances, it will be delicious
Yes and DH may think that to at some point. I do like some of the suggestions, like fried rice and pasta salad. DH not so much.

I love my home canned chicken meat. I use it for chicken enchiladas, chicken salad, chicken pot pie, in casseroles, etc. I agree with Southern Breeze, you can use it in any recipe that calls for cooked chicken. I'd be shocked if anyone could tell the difference. The glass canning jars do not leave any metallic taste. It's easy to pressure can.

For the pasta salad try different salad dressings or a combo of dressings. Try different kinds of shredded cheese, learn from my mistakes, make sure the pasta is cooled before adding the cheese. Like a lettuce salad, you can add things like diced olives, diced eggs, bacon bits, different kinds of diced onions, or many other things.
For the fried rice you can cook it with different kinds of onions or peppers, diced olives, mushrooms, or different broths instead of/with the water.

Since you mentioned home canned chicken (and I didn't want to start an entire thread for this question) - I plan on canning up a bunch of broth the day after thanksgiving (I have a couple back of chicken parts - raw) - Is it safe to add the cooked turkey carcass to the pot? I would think it wouldn't be an issue - but it would allow me to make more stock...

I always use the turkey carcass to make stock a day or two after Thanksgiving. I put the carcass in a stock pot, add water to cover, and let it simmer until the carcass is falling apart, usually a couple of hours. I strain the liquid through some cheese cloth and refrigerate it until the next day. I remove the solidified fat layer the next day, and then re-heat it and can it in the pressure canner.

Regardless of whether or not the components start out raw or cooked, the stock you make will get heated up, and then pressure canned. I'm not an expert but it seems safe to me.
If someone thinks differently, please chime in.

I read an article a while back eating the top 10 canned chicken brands deemed best for Keto. Costco’s Kirkland brand was #3. Their price fell recently from something like $16.99 to $12.99. I’m buying them like crazy, but I end up eating them instead of storing them. I’m really trying to stock up on these while the price is so low. But it’s so fast to throw the chicken mixed with a little spaghetti sauce and cheese or my new favorite stir-in…. Boursin cheese. I’m simple. I like it all.

We had a dog who had to have canned chicken in his food. I would put it in a colander and rinse in hot water and it tasted a LOT better.

I wouldn’t necessarily do hot water on something I planned to cook with, but you get the idea.

We had started with the Great Value at first, but then it started to have a nasty smell to it and the meat wasn’t all white. Went back to Swanson and it was all white, had less fat in the can and smelled a LOT better. Always hated to throw the broth away, but it always smelled like it had a lot more than just salt in there. Another great mystery of life.

Good to know! I don’t use a ton of canned chicken, but I keep a goodly stock of it on hand. Canned chicken pizza crust is actually *really* good!

I like to mix a can of chicken with 8 oz cream cheese, a handful of shredded cheddar, and a couple of teaspoons of ranch seasoning mixed together and rolled up in a crescent roll. Bake at 350 degrees for 13-15 minutes. It also makes a good spread for crackers.
