Misc Candied Violets

The war of the violets has begun at Casa OGM. DH, Thank God I love him, has a bug up his posterior about the proper height of our lawn. So I race the mower for violets. This is how I candy my violets. If raw egg whites are a problem or possible health threat you could try reconstituting commercially pasteurized powdered egg whites.

Pick violets. Leave the stem on for a handle. Rinse flowers. Put on paper towels to dry. Beat one egg white until shoulders are broken but white is still clear not foamy. I use a small piece of rolled up paper towel to paint the violet with egg white. First I put the flower face down on a clean plate and paint the back of the flower holding it by the stem. Then I paint the front. Next I put a heaping table spoon of powdered sugar in the sieve and dust the back and front of the flower. The flower is put on a paper towel to dry. I dust the bottom of my drying tray with a thin layer of powdered sugar and put the flowers on it, face down, cutting the stem to about an inch. Then dehydrate till fully dry. Store in a small canning jar. Some flowers will stick to the tray anyway.

You can do rose petals in a similar way but the pith part near the stem has to be cut out or it tastes nasty; a bit harder to do but worth it - same is true for rose jam and rose jelly.

Great idea, I hadn't thought of doing it with violets!
