Cajun Greenbeans.....!!

This recipe comes from a really old book I have,that was written by an woman in her 80's whose mother was a slave in Baton Rouge.

Best cooked up in a black iron skillet!

Fry up some bacon,about 5 strips....When the bacon is done,remove the bacon from the skillet leave the drippens in!

Put in 1 or 2 14oz jars of greenbeans into the drippens and add 1/2 cup of white viniger and 1/2 cup of sugar...stir till mixed...Bring to boil,then move heat back to Low..cook about 1 hour.

When done,drain the juice off and crumple the bacon over the top and serve.....

And,these are the best Sweet and Sour,Greenbeans you'all ever eat! :angl:

No, no, no... That's not the proper way to make green beans! ;)

Take your green beans and dump them in a pot.

Add a fist or two of diced garlic. Add a diced onion.

Add a gob of beef bouliion.

Add a TON of cayenne pepper, black pepper, and white pepper!

Simmer forever.

That, my dear, is how you do green beans. :D

That's the way I cook my green beans, too, Booger. The more garlic the better for sure. Those sweet and sour green beans sound yummy too. I'm going to try that.

I make mine by dicing 3 slices of bacon and frying it till it is just golden. Add beans (I like frozen, but you can do canned as well) add water till you can just see it and boil on high till most of the water is boiled away. Sometimes I drain the bacon, sometimes I don't. I do this with fresh or frozen beans and there is usually none left after supper.

Born and bred Cajun here and I'm always learning new things. I've never heard of putting vinegar let alone beef boullion in green beans. This I'll have to try!

Rusty, I tried this recipe a week or so ago and man-o-man with that first bite I was thrown back in time about 35+ years. It was the very same recipe apparently an aunt used to make the green beans she always brought to family reunions. Sure brought back some really good memories.

The whole family liked this recipe although thought it was a bit sweet so I'll probably use a bit less sugar next time. Really good stuff...thanks for the memories :D
