I was off looking for a cookie made without sugar and found an online recipe that was basically oatmeal and ripe/over ripe bananas. I don't remember what the recipe was now, but it is EASY, sweet, and very adaptable. I make it different every time. I hope you enjoy playing with these!

The Basic:
ripe or over ripe bananas, mashed
about an equal amount of oatmeal

I add an oil. Coconut oil, peanut butter, almond butter. I bet butter would work, too. I've made them without an oil, but I think one helps round out the flavor and they don't stick to the pan.

Being a chocoholic, I add cocoa powder, regular or dark. Just toss some in.

Or not!

Usually I add stuff, like nuts, dried cranberries, raisins, blueberries, vanilla, cinnamon. Lemon extract might be nice if you don't add cocoa. I must try that. Or almond extract? I haven't tried that either. Rum! That might give it a kick. Let your imagination run wild.

Plop it by the spoonful (my batter is usually pretty soft) onto a baking pan and bake about 12 - 15 minutes in a 350 degree oven. Less time is softer. They will harden up a bit after they cool. Hmmm. I bet plain whipping cream on top would be good, too. Sorta like a banana split without the ice cream. Because of the banana, I usually refrigerate them.

I tried a version of the original recipe when my pregnant friend was living here 18 years ago and was allergic to wheat - my experience was it just made a crumbled dry mass that no one liked.

I could see how adding fat - butter, peanut butter, etc (we did try olive oil once if I recall but it didn't taste good) might have helped, also adding other fruits and soft things.

But the basic internet version of just mashed banana and oatmeal never worked for us - the chickens didn't mind it though.

Hmmm. Mine are a bit crumbly, but very moist. I like them better than regular cookies now.

Second try at answering. The first one went the way of lost socks.

I use regular oat meal. I would think that quick cook oats would work, too. Please let us know how it goes.
