Sheree we have eaten lots of hamburger that was canned just plain. All over few years old. Some over a year old when canned. Have never had a problem. Anyone else want to check in?,

The question was asked why people weren't canning their own ground beef, instead of buying it from Keystone. One person said that ground beef lost it's texture after being canned if it wasn't used within a year of canning. Since I'm new to canning meat, I wanted to make sure the correct answer, before I canned up anymore, cause I'm sure that i'll have more than a year's worth canned by the time I'm finished. I don't want all the hard work to go to waste if it won't last any longer than a year.

Got to finally use the crank handled strainer today for those tomatoes. Son loaded them while I turned the handle. Then he helped me stir the ketchup until it thickened some. We used his french fry cutter on some of those potatoes I harvested a few weeks ago. We fried those up and paired them with a little of the ketchup. Then I canned up the rest. It made 10 half pints and a little more that went into the fridge. I put 1 jar in my mom's b-day gift bag. Btw, that is today, and she is 79 and beautiful.

I also harvested my dill seed tonight. Killed looots of squash bugs and destroyed probably a dozen clutches of their eggs, and dug out 8 vine borers which went to the chickens.

Speaking of chickens. Hubby ordered 17 chicks from MPC. That is on top of the already 6 chicks in my brooder right now, amd the 3 outside. I told him I am not taking care of them alone. I will butcher them out if he thinks I am going to do that many chickens all by myself on top of everything else I do. Btw, I think he is over his fear of chickens now. I caught him in the front bedroom giving them mealworms and affection.

How do you get the vine borers out? I have one squash plant that I think has a borer. It flops and then comes back about the time I'm ready to pull it out.

Did you use broth with your ground beef, or just dry? I'm using beef broth when I can mine. I wonder if that makes a difference in how long it lasts? I'm sure not canning anymore, until I find out.

GOOD DEAL ALERT!! I was browsing deals on walmart.com. They have (in the rollback section) the 12 packs of corn and/or green beans for just over $5 for the case. That makes them 45 cents a can. They also have several different 24 packs of ramen for under $4 (like $3.87 or so) and had some flavors I couldn't get at my Walmart, where a 12 pack costs $2.65 or so. I ordered some other stuff too (pulse oximeter for under $13) and got free shipping. Not bad if you have some holes to fill or a few bucks to spend.

I use a minimal amount of beef broth or thinned way down packaged onion soup mix when I can ground beef. Too much liquid makes the meat mushy; and if you keep it for any length of time (year plus), it is still edible but if you are picky about texture, it could be an issue.

The kitten count is now up to three - two grey striped and the one tuxedo kitten... I'm feeding them in the machine shed to keep the mess off the porch; Mama kitty seems to approve. The kittens scatter when I get too close, but come out when I put their plate of food down and step back. I'm hoping that they tame down over time so that I can catch them at least long enough to take a trip to the vet.

The Evil Empire had a good quantity of chicken thighs when I stopped by on my way home from work this morning, so I bought two large packages to toss in the crock pots to cook. I don't work again until Thursday night, so will try to pick up more Friday morning, then will can them while I am off over the weekend.

I slept most of the day today after I got home from work - longer than I had planned as I shut off the alarm I'd set to get up and go to the Farmer's Market and went back to sleep instead - whoops!! I do feel pretty good this evening though, so I must have needed the sleep.

I'd hoped to get out early tomorrow morning to get the gardens tilled before the neighbor lady and I go to the pool to exercise, but I just walked out there and the ground is still pretty damp, so I'm going to wait until afternoon to till. I need to get it done before the weeds get out of hand - lots of red root pigweed coming up, dang it! The tomatoes are coming on pretty good; the deer have eaten the tops out of a few pole beans plants, but I did plant them pretty thick so should be okay. If they eat too many, I'll send the grandsons out to pee around the garden :lol:

Well, I need to go take the hummingbird feeders down; then I'm going to prop up my feet and read for a bit until I'm ready to head back to bed.

You folks all take care out there...

A little better each day. Managed to get the bedcovers washed - 3 loads of laundry and the freezedryer loaded today. Also sprayed fungicide on the tomatoes.... bout 3 hours before we got a nice rain. I did also manage to work 8 hours from home today. Was also able to eat a little more.

Ok. Thanks, Renee. I have read my canning book that came with my canner over and over, and I can't use my canner without adding boiling broth or other liquid to fill the jars. I guess that's the difference in the regular pressure canners and my new digital one. I'll be limited now as to how much meat I can at one time. I sure don't want any to go to waste, because the texture changes. I try to keep at least a year's worth of ground beef in my freezers at all times, but was wanting to convert it all over to canned. If SHTF, I'll still have the option of doing it all, but not now. I'll take my chances that this old freezer will keep working, until it's all eat up. I'm still working towards emptying it out, and unplugging it.

I ordered two cases of TP from Amazon yesterday. Hubby ordered two more today.

I am debating ordering a bread machine off the amazon prime day but haven’t been able to justify it yet. It’s a want, not a need. It’s a Zojirushi. It’s a “top notch” machine apparently. I do have a Hamilton beach bread machine - that’s why I’m having a hard time justifying the fancy one.

Slow and steady.

Oh, definitely invest in the Zo! I was gifted a new one for Christmas years ago, and used it 2-3 times a week after the kids moved out. (Before that, I baked 12 loaves a week... a machine never would have kept up!)

But when hubby was working off the farm, and I was milking and running the farm, it was a lifesaver. I'd fill it and start it in the evening, and hubby would get up (sometimes at 2:30 am to plow snow) and have fresh, warm bread for breakfast. I used it heavily for 15 years, then gave it to my daughter, who has now used it for 10!

Everything went well at the dentist, yesterday. I slept through the whole thing. I woke up back at home in my recliner. I don't even remember leaving the office. Cary carried me to the car, and into the house. He had even stopped at the country store down the road and brought home pizza for his supper. I had ice cream waiting in the freezer for me when I woke up. I have another appt. August 10th for the last fillings. I thought I was done, but I have 2 more, then the surgery. Once the last 2 fillings are done, I'll be able to wear my bottom partial dentures again. The surgery will be to remove all molars on the top. I'll have to wait and see about getting another partial plate for topside, until after the surgery.

Cary's doctor appt. is tomorrow afternoon. We plan to do some shopping while in big town. I want to go to the huge farm and ranch store we have there to stock up on new garden seed for next year. I also want to get some new garden tools. Cary will be looking into getting his Troybilt tiller fixed there as well. He bought it there, and they sell all the parts and service them. Maybe, they will have some smaller ones on sale that he can look at, too. I wish he would just buy a smaller one that would be lots easier for him to use. I think the one he has is the biggest one they make.

Even though, I just got in an order from Sam's, since we're in big town, I want to go by there to take advantage of some of their "in store only" items for storage. It won't be adding to my pantry, just replacing some things I've used, or close to using up. I like to replace things, before I run completely out.

Out temps are still high, but it looks like we might get some rain, today.

I have read similar reviews of people who have them and use them A LOT. I just have to decide if I’m really going to use it.

Went to our local grocery store for ground beef. Got 10 lbs. for 2.99 a lb. I'm cooking most of it and making 3 meatloaves for the freezer. I also bought 3 lbs. of chicken breast.
I like having prepared meat for quick dinners. Tonight will be leftover cucumber salad and fried chicken plus sliced cantaloupe.
I have a collection of 50s and 60s Better Homes and garden cookbooks. I've been looking through the Salads book. I'm going to try at least one molded jello salad, dh said he would try it. I have my mom's copper jello molds. This should be fun! Lol
I got a new set of sheets on Amazon and I have a battery operated fan in my cart.
Most of garden is hanging on in the heat but my tomatoes as usual are doing horrid. My cucumbers are on a growth spurt. I'm pulling up the dill and my cabbages have stopped growing. I'm going to pull them and cut out the center leaves for stir fry.

I just got back from a larger (for us) grocery store run. :eek: on the rising prices! I purchased several items that aren’t on our normal grocery runs (due to family visiting)

I got items on my list plus a few extras for the pantry. It continues to build.

I paid $7.29 for a loaf of Dave’s organic “righteous rye” bread. I thought 6.29 was bad last time I bought it. This is a RARE treat for hubby and I. We get this bread and eat it with deli sliced roast beef (also expensive for us). I’m thankful we can do it, but we don’t splurge like that weekly.

I am so very thankful for our garden.

I had ordered a case of Idahoan potatoes au gratin direct from the company. When they arrived I discovered that the potatoes are loose in the box, so I need to repackage them. Then I realized what a small amount of potatoes are actually in the box. :(

Wound up ordering a couple of five pound bags of sliced potatoes and some cheese powder, figure I can make my own for less.

I don't use my bread machine much as I prefer corn bread or Irish soda bread to yeast breads. I should probably give it to the middle grandson who is interested in baking and cooking :)

The neighbor lady and I hadn't been to the pool for a while, so we went today. And then we went out to lunch. And to the Amish bulk food store. The hardware store. A plant sale. And then I took a nap after I got home :lol: We're going back to the pool tomorrow, but then I'll come straight home to take a nap as I have to work tomorrow night. I'll go to the Farmer's Market and the fruit stand after I get off work to pick up a few things for the weekend; not sure whether I'll have the boys or not this weekend.

Got the gardens tilled finally - that took me an hour and half this evening. I still need to go through with a hoe and get the weeds between the plants, but that can wait until tomorrow, or even the weekend.

Yesterday, Tuesday, I went to the VA, so I got nothing done on my dry canning, just fell into my bed and went to sleep. Tiring trip. I was going to go back today with DH, but crawfished out at the last minute, he said I didn't need to go. Bless him.

I continued today with the dry canning. I had three bags of oyster crackers that were not expired. Only one bag smelled fine the other two smelled rancid, the goats love them anyway they can get them. I've completed the rice for the moment. I had two large bags of corn grits from commodities and I put that into jars. Package said it was corn grits or polenta. so its there and dated in case I want or need it.

I also put up two large bags of organic popcorn. Three half gallon jars waiting for 02's.

DH put tomatoes on the porch ledge in the sun to ripen and in a day they were cracked and leaking, almost all went to the goats, they love tomatoes. What was left went in the freezer in ziplocs.

I'm supposed to get an Rx in the mail for my UTI, Everything else was about the same. My arm and my sciatic leg did not bother me at all while I was there, but kicked back in this morning. She offered me xrays and therapy. I declined for now.

It was 102 and I stayed in except for a couple of times when I went out to check on a couple of goats.

Hope your day gets better, Moldy!

It's a fairly cool day for mid July; there are some grey clouds overhead but blue skies and big puffy while clouds to the southeast. Weatherunderground.com says that there is a chance of pop up thunderstorms for the next hour or so. Hummingbird feeders have been filled and hung out on the porch, porch plants have been watered, and I finally planted the ginger that sprouted in the veggie drawer. I put out food for Mama cat and the kittens; some of it has been eaten, but I didn't see hide nor hair of them when I took the food or or when I went back in the shed to get a pot for the ginger so she may have taken them out to teach them to hunt.

I should probably be out weeding between the plants in the garden but don't want to get dirty until I hear from the neighbor lady to see if we will be going to the pool again today. If so, it will be an hour in the pool, a stop by the taco truck, and then home to do a little bit of housekeeping and laundry before I head to bed for a before work nap.

I'll probably stop by the Farmer's Market and the fruit stand on my way home from work tomorrow morning; then head home to catch a nap before heading out to hoe the weeds from between the plants in the gardens. I'm off for three days once I get off work Friday morning; no clue if I'll have a boy or boys over the weekend or not. I may go up to the nearby orchard and buy a peck of peaches to see how they taste - the ones I bought and canned last year had very little peach flavor and were somewhat bitter; the ones that they are selling this year are of the same variety so I don't want to make that mistake again.

Well, I'd better go get a few household chores finished up so they won't be waiting on me if I do go to the pool... Take care all; have a great Friday!!

We finally got rain last night, lots of noise from it. It knocked down power poles and lots of people without power. Not us, thank God, although it blinkt a few times. Was supposed to be cooler today, but its not.

It looks like we are going to lose our smallest, youngest baby goat. She just lays around, will not nurse, does eat a bit of grass though, and her belly is full. DH gave her a does of Ivermax yesterday hoping it would perk her up.

I have no energy today, been like that since I went to the VA.

I decided to go to Wednesday night church last night, got there and there was no church because everyone is tired from VBS. so I went next door and visited with the pastor and his wife and their 4 small children.

I asked the pastor if people at the church were pumping up their pantries and he said that most were. That was good to know.

Being out in public/around a lot of people wears me out, Judy. Good to hear people are working on their pantries.

No pool today; neighbor lady had headache and a sore throat; she said it is going around at her place. Hoping that she feels better soon - and that I don't catch whatever it is since we were together most of the day yesterday.

I did go out and started weeding in the garden, but the crop duster plane showed up and I didn't want to get hit with whatever he was spraying since he was to the south and the wind was out of that direction, so I closed the the doors on the shed, took down the hummingbird feeders and came back inside until he moved to fields further west. By that time, I didn't want to go back out and weed as it was getting pretty hot. I did go out to re-hang the feeders and open the shed door though.

I've tried three times to take a before work nap and haven't managed to doze off any of those times, so it's likely to be a B-12 night at work - one 5K mcg when I get there, and another about 2 am when the sleepies hit. I probably shouldn't have made up one of the Knorr's packaged Alfredo mixes to have something to carry in my lunch tonight. I used broth and some chicken from the crock pot (that I cook for the outdoor cat and her kittens) to fix the packet of mix - carbs and chicken; I'm doomed :lol: Only one night - I can do it!!

I don't care for the boxed milks - they taste a little weird. I store dry milk; and vanilla instant pudding mix - I put a tablespoon of the pudding mix in each quart of milk I mix up - gives it a better 'mouth feel', and taste. I wonder if I could add the vanilla instant pudding mix to the boxed milk and see if that helps the taste?

Cary got a good report from his doctor, yesterday. His appointment was at 1 pm, but we didn't leave the office, until 3:30 pm. Doctor was running about an hour late! Everyone there, including us, were getting frustrated by the long wait.

We left there, and went to the farm and ranch place. We stocked up on more seed for next year. There were plenty of seed, except for the squash and cucumber I wanted. They had a nice small troybilt tiller on sale that we looked at, but Cary is convinced that he can fix the one we already have, so I didn't say a word.........

Went on to Sam's for a gas fill up and get the car washed. Did that, but Sam's was so crowded by this time, I told Cary to just forget it. I'll order, instead. So, that's what I'm doing today. I had no desire to fight that crowd, especially, since COVID is on the rise really bad here, again.

Before coming home, we went to OutBack, and ate supper. We both had a nice meal. I had chicken instead of steak, since I can't chew steak right now. There was hardly anyone there, and we had a booth all to ourselves in the very far back of the dining room. Cary wanted to get a little "sporty", LOL......:smashblue: I told him to behave himself.........MEN!

I got another gallon freezer bag full of freshly chopped red and green bell peppers in the freezer, today. I have 8, #10 cans of chopped dehydrated red and green bell peppers, but I like having some on hand from the freezer, too, for quick use.

Did laundry. Hung on the clothesline. They've already been brought in, but not put away, yet. Made out my Sam's order. Everything I wanted was in stock to be delivered. Watered the gardens, again. No rain in sight.

Almost had a heart attack when we saw our electric bill, today. We knew it was going to be high, because we've been using the ac more than usual. It's been a really hot summer so far. Oh well. We are too old to do without some ac when it's 110-120 with the heat index. $150. I like our electric bill more in the winter. We hardly even have one.

The wide mouth jar lid attachment from food saver just doesn't work, like for years. I have a canister that quart jars and smaller will fit in so those wide mouth lids seal fine. But for 1/2 gallon jars it was impossible, so I've always had to use o2s. I ordered a new set of jar lid attachments that ended up being slightly different. At first I thought it was a piece of junk and I was going to return them. But I tried the wide mouth attachment out and it seals perfectly for the 1/2 gallon jars. This saves 02s for mylars.


So I've been vacuum sealing like crazy this afternoon. What a blessing.

Thanks, I just ordered it! Great price. My jar attachments don't work anymore, either. I tried them with a brake bleeder, and it will pull a vacuum but *not* with the jar attachments. My FoodSaver died and I don't want to pay for a replacement, at least not right now. So hopefully this will get me going again!

I've returned two brake bleeders and bought two more. But thank God my food saver is working. The brake bleeders kill my hands.

Yes, the brake bleeder is harder, but I'll just do one jar at a time if I have to, or get dh to help. He has arthritis also, but still his hands are stronger than mine.

I think all the FoodSavers will do jars if you have the kit that you linked. The little plastic things on the end of the hose in the kit attach to the little green hole on top of the FoodSaver that says "accessory port".

I sealed a lot of rice and pasta but today i noticed a couple of the pasta bags had lost the vacuum stiffness. Would jars also loose vacuum.
