Food Use for Broth / Stock leftover bits

I am trying to find a use/reuse for most everything, and am trying to see how little I can throw away (but I have a tremendous way to go) - Right now I am focusing on food.

I typically buy my chickens whole / bone-in ham / etc, so that I can make stock after eating all the good parts. However, after I make stock, I am trying to figure out what I can do with what is left over.

Would love to know if anyone has come up with any ideas?

If you have dogs or "slop" animals you could probably add it to their food.

Mostly what is left over from where I make stock is pretty wore out, flavorless, and has an awful texture from cooking it so long. YMMV. The bits left over from making chicken broth might be good for shredding and mixing with a rice dish or something like that.

Do you just make one batch of stock, from a set of bones, or do you make multiple batches?

Usually I only get one batch. I've tried to get a second batch a few times but it always came out too light and flavorless for any use I could come up with. Might work for feeding to invalids but even then it would be more like feeding them hot water.

I also think that by the time you've cooked down the remnants of a chicken (or turkey) carcass, there's not much left beyond some animal feed and a bit of scrap for the trash. I know some say you can do it, but I'm not a believer in composting bones.

Take that pot of good, rich stock and use it for soup base of flavoring in rice or other grains (amaranth, quinoa, etc.), it's a great bonus. We made some recently from some carcasses that I'd cooked on the smoker, it was very nicely flavored.
