It has been proved to me that almost any recipe that calls for calls for veal you can usually substitute with chicken or turkey breast that has been pounded to the same requirements of the veal and still receive a genuinely pleasing result from the recipe.

Don't be afraid to experiment. Many a great recipe was developed this way. I will admit that I have made a few that even the dog refused to eat, but nothing ventured, nothing gained. I will add that the dog did get kinda fat and could have stood to miss a few meals anyway! It usually eat better than most people as a general rule.

The most important rule with experimenting is to write it down. Write the new recipe down or make changes on the actual recipe used for future reference. Either while your cooking or right after if you have a good memory, I don't that's for sure. Try keeping a bunch of blank 3 x 5 index cards in your kitchen for writing things down as you go. If you fail to do this you may never be able to duplicate something that was really exceptional. I have forgotten this step on a few occasions, and my Fluffy Hubby has still not let me forget about the veal roast that cannot be repeated, no matter how many times I've tried.

So I now suggest that you have fun, experiment and go for it. What's the worst that can happen? The dog gets fatter or Heaven help us your hubby or you do? Don't forget to report back on both the success and the failures of your ventures so other can learn from them.

Yes, Kath, “jot it down while cooking”. Wish I had done

that yesterday! Had about eight people for dinner, but

they were here all day, so I was running back and forth to

the kitchen making a casserole. Well, wouldn’t you know it…

a great success! People wanted the recipe and I couldn’t

even remember what all that I’d put in…LOL

Welcome..... I've done this too so many times and it is embarrassing to say the least. "Gee, I'm sorry I don't have a clue what I just feed you!" I'm really sold on the index card thing though. It's been working out really good for me, so long as I remember to buy blank ones to put on refrigerator
