[tip] Everlasting Potato Yeast

This has appeared many times in threads, but never told in detail how to do it.
This is a yeast growing process.




1 large potato
1 tablespoon dry yeast
1/4 cup sugar

Cook the potato in at least one-pint of water until it is mushy. Mash it into the water until there are no lumps. Then pour it into a quart jar, filling the jar about 2/3 full. Add the yeast and sugar.

Set the starter out at room temperature until it is bubbling and lively, then cover loosely with a piece of cheese cloth fastened with a rubber band and refrigerate. (Don’t use a metal lid and ring because the yeast may form enough gas to blow up the bottle.)

When needed, remove the jar from the refrigerator and pour out a pint of liquid yeast. (To replace the yeast that has been taken, add more potato, water, and sugar to the jar, and let it stand at room temperature to GROW MORE YEAST CELLS, then refrigerate again.)

Use the pint (2 cups) of liquid yeast to start a sponge for bread making. One pint of starter is the equivalent of 2 tablespoons of dry yeast. Reduce the liquid in the recipe by half cup.
