Raised Bed Sweet potatoe bed help

Last year I grew Garnet sweet potatoes in two 4x4 raised beds. I was disappointed because they never cured "sweet". Ended up tasting like regular squash. (I don't have a warm humid place to cure so I tried the Christmas lights in the oven for 3 weeks)

Don't know if I will try again this year....what can i I grow in the same beds if I change? Been told that the sweet pots will continue in the beds since I couldn't remove all the roots.

I would go for taller for this year. Peppers, tomatoes. Then if the sweet potatoes come back, they won't shade out the others. And they'll help keep weeds down.
