The seven pounds of cabbage I bought ten days ago is fermented. I ended up with two quarts and two pints. It is a little crunchy and I could have let it ferment longer but I decided it was time to jar it up. It was fun and I'm ready to do more. Fermented cabbage is an excellent probiotic!

LOL...you sound like hubby,...first time I set it...hubby started arguing about how I was doing it...out!! Go ask mom n gran...cause I ain’t arguing with ya...oops I was right n he had to apologize when both looked at him n said why you askin us...she’s helped us set it for 30 yrs so she should know...he was not a happy camper to discover I knew what I was talkin about ...now he sets the 10 gallon crock every yr...he’s a tad slow on learnin not to argue with me...but he is slowly learnin...sigh...it’ll prolly take another 30+ yrs to finish teaching him that...heh

That’s coming up on my hit parade. Have a huge green cabbage I just pulled and a couple more yet in another day or so to ferment in a big bucket, then can it up. Have several gorgeous purple cabbages coming up soon, kind of want to dry some of that in the Excalibur if I can dig it out of my Conex. Has anyone made sauerkraut with just purple cabbage?

It should taste fine, but the color may not be very nice. I use purple cabbage for my canned coleslaw, but thats almost a pickle, and the acidity helps hold the color.

I picked up four heads of cabbage today. Saw a video on you tube and decided to try that variation. Packed the jars with shredded cabbage and added one teaspoon each of salt, sugar and white vinegar. Then filled with hot distilled water and water bathed for 20 minutes. They are suppose to set for four weeks before using. it will be interesting to see how they turn out. I had seven pounds left so it is fermenting along with a couple of carrots in my gallon jar. A food processor sure made it a lot easier than cutting with a knife.

My new Pressure Canner is suppose to be here tomorrow!
