One thing she could do, anyone could do, actually, and that is have a couple of pots of parsley, chives, maybe a couple of other herbs. Even in an RV. My sister-in-law has at least half a dozen potted plants in their motor home (they live in it full-time). None of hers are herbs, but they are easy to grow that way. She puts her plants in the sink when they are driving.

The other thing is to make sure mice can't get into any of your food. Christmas tins work pretty well for that. RV's always get mice in them (and so do regular houses, in my experience). Square tins, if you can find the right sizes, use space more efficiently. And they are usually pretty cheap at thrift shops before Christmas.

Depends on usage. When I lived in the trailer wayyyy up north I would go through a 20lber every 2 to 3 days it was that cold..but when nicer weather prevailed you could use 1 a month. Cook over fire pit..port in your hot water from a reliable source using covered buckets.

Up here in Ontario you can buy a 500lb propane tank and company will come out and fill..

She is traveling in a large pickup camper and now lives in a 5th wheel. Shes been full timing for years and has documented it very well. I remember when she was snowed in in Colorado and how she dealt with the plague. She's resourceful.

Going from a truck camper to a 5th wheel she'd feel like she is living in a palace. In my experience the older models were built with wonderful storage, the newer models have little to nothing in comparison.

She’s had all kinds of RVs over her years of full timing. From van campers to the 5er. Interesting lady.
