I guess I hadn't though about posting as I thought it was such a normal thing. Then grand son came up to fetch his dog and tried some I had cooking down and took a container of it home with him; along with a jar of rhubarb strawberry.Flipper also reminded me not everyone has made it before.
I don't do measurements for it sorry. I never know how much I'm going to have.
Wash rhubarb cut bottoms and ends off if browned.
Cut up into at least 1 inch pieces and throw in a pot of water that's at least 1/3 the amount of cut up rhubarb that you have.
Add a tablespoon of lemon juice depending on how much rhubarb you have. Less for less fruit.
Begin to cook and soon it will stop being chucks, be careful not to burn or have stick to pan.
Start adding sugar, and flavor to taste as it cooks. Some like to keep more sour and some sweeter.
You can add other fruits to this whole, pureed or crushed. My dh likes strawberry rhubarb.
I like to cook mine for hours to thicken.
Water bath or steam can. Or put in dehydrator and make fruit roll ups.
This can be used as applesauce, in cakes, over vanilla ice cream, apple pie or just in a bowl.
