Yakh-dar-Behesht (Ice-in-Heaven)

1 1/4 cups Rice Flour
2 1/3 cups Cornstarch
5 cups Sugar
1 cup Rosewater
6 cups Chilled Milk
3 cups Chilled Coconut Milk
9 cups Cold Water
3/4 to 1 cup Crushed Pistachios


Mix the cornstarch in the cold water until dissolve. Next, mix the rice flour until dissolved in the cold milk and coconut milk. In a 5-quart saucepan (preferably Teflon coated) mix the two together and bring to slow boil over low heat. Constantly stir the mix until it thickens. Now add sugar and rosewater. Continue stirring the mix while it boils very slowly so that it does not stick to the bottom. When the mix becomes very thick, it is ready. Pour it into a deep glass rectangular dish and shake so that the surface is level. Let it cool down completely, then cut into serving size pieces. Sprinkle the pistachios on top. (Serves 8)
