3 tablespoons vegetable oil
1 cup uncooked regular white rice
1 medium onion, chopped (approx. 1/2 cup)
2 1/2 cups water
1 1/2 teaspoons chili powder
1 teaspoon granulated garlic or 1/ 2 garlic powder
1 small green bell pepper, chopped (approx. 1/2 cup)
1 small pobleno pepper chopped (approx. 1/2 cup)
1/2of a yellow or red pepper, chopped (approx. 1/4 cup)
1- 8 oz. can of tomato sauce

In a heavy pan with a lid. Cook rice and onion in the oil over a medium heat. Stir frequently and cook until the rice starts to become a golden color and onion is tender. Add in the remaining ingredients. Bring to a boil, then set burner to a medium low heat, cover and simmer gently for about 30 minutes, until all of the liquid is gone and rice is tender and fluffy. (Serves 6 side dishes)

Note: For a quick one-dish meal you can add in 1 pound of cooked ground beef (or thin beef strips lightly browned before hand) when adding the balance of the remaining ingredients to the rice and onions. (Serves 4 as a main course)
