You'll "get it" after gatherng the ingredients... And you'll enjoy the feast, too.

Scarborough Fair Roasted Chicken

Large roasting chicken (5-7 lbs.)
Two medium onions
Four garlic cloves
1 T Dried Rosemary
1 T Dried Thyme
1 T Dried Parsley
1 T Rubbed Sage

Preheat oven to 350’.

Empty cavity of chicken, wash in cool running water inside and out.

Slice onions into quarters and place inside cavity.

Peel and slice garlic cloves and place inside cavity.

Rub herbs onto skin of chicken.

Place in a glass dish and cover with aluminum foil.

Bake for 1 ½ to 2 hours depending on size of chicken. Remove aluminum foil for last 15 minutes of baking time. Meat thermometer inserted in thickest part of thigh should read ?

Boil carcass, neck and giblets in large stockpot with 6 cups of water until meat falls away from the bone. Cool. Remove meat from broth and freeze in 2 cup packages. Refrigerate broth.

You know what is good too? Along the lines of Scarborough Fair chicken... do you have salmon sales periodically in your area? Where you can buy whole ones very cheaply? I found these both in Colorado and also here where I live in Missouri... fixing this in a smoker is great, but my ex got that in the divorce :) I like to take the salmon and rub the inner cavity with garlic gloves, add honey, lemon, salt & pepper to taste. Honey & garlic combined is a surprising and delicious taste combination, also works well with chicken and pork... cut some slits in the inner (well-cleaned) cavity of the salmon... roast for approx. 45 min to an hour... leftovers can be frozen for use in croquettes, etc.

Garlic and honey. That does sound like a good combo.

When I lived on the West Coast, whole salmon were a good buy. I can get them in NC, but they come at a premium. Maybe instead of looking for them at the grocery store, I'll see what they cost at the seafood store. Love salmon. 'specially fresh, I went on a fishing boat and caught my own one time, actually caught two but could only keep one. But that was cool, 'cause my bud didn't catch his, and he could take my extra one home!

My cat didn't know what to think of that big fish sitting in the kitchen sink at home! He thought he had gone to heaven. :lol:
