Doing some baking this afternoon. I thought I would share my favourite Cherry Loaf recipe

MARISCHINO CHERRY LOAF
2 cup flour
1 cup white sugar
3 tsp. baking powder
1/2 tsp. salt
2 eggs
1/4 cup maraschino cherry juice
3/4 cup milk
3 Tbsp. oil
1/4 tsp. almond flavoring
1 cup maraschino cherries
1/2 cup nuts (optional)
Put dry ingredients in bowl; beat in eggs, milk, juice and oil and flavoring. Beat until smooth. Stir in cherries (cut in half) and nuts.
Bake at 350 degrees for 1 hour.

My Notes:
- more juice = denser, moister
- I cut cherries into thirds or quarters, rather than halves
- I use 375 ml jar of cherries; use all juice and top up to 1 cup with milk (in place of 1/4 cup juice and 3/4 cup milk)
- works fine with lemon extract in place of almond
