Very yummy banana bread!
<B>Moist Banana Bread </B>
3 Or 4 ripe bananas
1 Egg
1 c Sugar
1 1/2 c Flour
1 ts Salt
1 ts Baking soda
1/4 c Melted butter or margarine
+ 1/2 c Walnuts (optional)
+ 1/2 c Chocolate chips (optional)
Mash bananas by hand or with mixer until fairly smooth (may still appear slightly lumpy).
Sift flour, salt & baking soda together.
Stir in egg. Stir in sugar. Stir in flour mixture. Add nuts and/or choc. chips if desired. Stir in melted butter.
Pour into 1 greased* and floured loaf pan or 2 small loaf pans and bake at 325 degrees for 50 to 60 minutes.
Cool to room temperature in pan, on a rack. Remove from pan, wrap and refridgerate over night.
*Note: If possible, grease pan with Butter flavored Crisco or use butter.
Other Notes:
- The refridgeration makes a big difference!
- I find metal pan works better than glass for even colour
- I've made with choc. chips and without; prefer no choc. or nuts
