This shortbread is awesome... thanks to my hubby for sharing it.
Apparently this shortbread freezes well, but personally I haven't seen it last long enough...
<B>Melt In Your Mouth Shortbread</B>
1 Lb butter - creamed
2 tsp vanilla
1 1/8 cup icing sugar
4 cups flour (gradual, in 2 steps)
Cream butter with electric mixer, add vanilla. Slowly add icing sugar.
Gradually blend in flour until it forms a stiff dough.
Turn dough out onto a floured surface, and continue kneading flour into dough <B>only*</B> until it starts to crack. (when you make a ball and push on it, cracks appear around the edges). You likely won't need the whole 4 cups of flour. It depends on humidity levels, dryness of flour, etc.
Roll to 1/4 inch thickness, use cookie cutter. Decorate if desired.
Bake on cookie sheet, at 310, until just starting to turn light golden brown around the edges (about 25 min.)
<B>*</B> Too much flour = dry and tasteless
<B>*</B> Not enough flour = flat and greasy
<B>Variations:</B>
1) Make small balls from the prepared dough, roll in egg, roll through crushed walnuts, and bake.
2) May add small pieces of cherry or nuts to the dough before baking.
