Crash Test Dummy
8 pieces (approx. 2 pounds) sandwich or rolled steaks
2 eggs, slightly beaten
1 cup seasoned breadcrumbs
¼ cup olive oil for frying
1 loaf French bread
½ cup butter, softened
6 garlic cloves, pressed
2 cups prepared marina sauce
8 oz. mozzarella cheese, sliced
¼ cup romano cheese
Lightly pound the steak with a meat mallet to tenderize the meat a bit. Dip the eggs and then coat with the bread crumbs. Place on a cookie sheet in a single layer. Put in freezer for 30 minutes to firm up. Fry quickly until browned in olive oil, remove from pan. Repeat until all the meat in browned. Next slice the bread down the middle the long way, then cut into 8 even pieces. Mix the butter and garlic together and spread evenly on each piece of bread. Place in a baking dish in a single layer and bake for 5 minutes in a 400 oven and then remove. Place a steak on top of each piece of bread, pour some sauce over the steak and cover with the mozzarella cheese. Evenly sprinkle the romano cheese on top and bake in the oven at 425 for 20 minutes or until cheese is golden brown. (Serves 8 )
