2 pounds sandwich (or rolled) steaks
2 eggs, slightly beaten
1 cup seasoned breadcrumbs
3 garlic cloves, pressed
¼ cup olive oil for frying
¼ cup Parmesan cheese, grated

Lightly pound the steak with a meat mallet to tenderize the meat a bit. Dip in eggs and then coat with the breadcrumbs. Place on a cookie sheet in a single layer. Put in freezer for 30 minutes to firm up. Fry quickly until browned in the olive oil and garlic, remove from pan. Repeat until all of the meat is browned. Sprinkle with the Parmesan cheese just before serving. (Serves 6)
