Here are a few of the most delicious recipes I have. They are fast and easy and so good.

1. Cream Cheese Chicken

4 pounds Chicken without skin -- ready to cook
2 tablespoons Butter or Margarine -- melted
1/2 teaspoon Black Pepper
1/2 teaspoon Salt
1 ounce Italian Salad Dressing Mix -- low salt
1 can Condensed Cream of Chicken soup
8 ounces Cream Cheese -- cubed
1/2 cup Chicken Broth
1 large Onion -- chopped
2 tablespoons Chicken Broth -- to cook onion
2 cloves Garlic -- minced


Brush chicken with butter and layer in crock pot with dry Italian seasoning mix sprinkled on each layer. Cover and cook on low for 6-7 hours. About 45 minutes before done, brown the onion in the chicken broth and then add the cream cheese, soup, salt & pepper and remaining chicken broth to the saucepan. Add the minced garlic and stir all ingredients until smooth. Pour sauce mixture over chicken in crockpot and cook an additional 30-45 minutes. Remove chicken to platter and stir sauce before putting in gravy bowl.

Baked in oven method--

brown the chicken ( boneless, skinless breast fillets) in a skillet with the dry seasoning mix. Put the chicken in a casserole dish, make the sauce in the skillet and pour it over the chicken. Cover the casserole dish and baked at 350 degrees for 35 minutes.

2. No Fuss Baked Marcaroni and Cheese
This is how real mac and cheese is suppose to taste.


Melt 3T. margarine in a 2 qt baking dish
Add 2 1/2 cups uncooked elbow macaroni mix together
Add 1/2 t. salt, pepper to taste, 3 cups shredded cheese...toss lightly
together
Pour in 1 quart of milk. DO NOT STIR....DO NOT COVER
Bake at 350 for 1 hour

3. Oatmeal Cake w/ Peanut Butter Fudge Frosting
Great for potluck dinners. Have lots of recipe copies handy!

Step 1
1 C. oatmeal
1 1/2 C. hot water
Step 2
1 C white sugar
1 C brown sugar
1 Stick butter
2 Eggs
1/2 tsp salt
1 tsp vanilla extract
Step 3
1 1/2 C. Flour
1 tsp. soda
1 tsp baking powder
1 tsp cinnamon
FROSTING
1 1/2 sticks butter
2 C brown sugar
4 T. water
2 T vanilla extract (You MUST use 2 TABLESPOONS)
1 1/3 C. Peanut butter

Step 1: pour water over oatmeal and let sit for 5 minutes
Step 2: Cream all ingredients together. Add step one.
Step 3: Add all the step 3 ingredients to Step 2, mixing thoroughly. Pour into a 9 x 13 pan. Bake in a preheated 350 oven for 30-40 minutes depending on oven. Cake is done when knife inserted comes out clean.
Frosting: Bring all ingredients, except peanut butter to a boil for 1-2 minutes stirring. Take off heat and add peanut butter and stir until smooth. Pour hot frosting over hot cake. Frosting will not be real thick, but will set up as the cake cools.

Start the fudge during the last 5 minutes the cake is baking and pour over the cake the second it comes out. If you use a clear glass Pyrex to bake the cake, you can watch the fudge seep down the side.


4. Ketchup Patties
Kids love these


1 lb hamburger meat
ketchup
worchestershire sauce
sugar or brown sugar
chopped large onion
chopped green pepper

Make hamburgers into patties and set aside.

Chop onion and pepper and set aside.

In large skillet mix ketchup, worchestershire sauce and sugar to taste, enough to cover the patties.
Then add uncooked hamburger patties, onion and green peppers and simmer for at least an hour, turning the burgers a few times.

5. Crock Pot Pot Roast with Gravy
Rich and Comforting

2 cans cream of mushroom soup
1 envelope Lipton's dry onion soup mix
1 1/4 cups water
4-5 lb. pot roast.
Cook on low for 9 hrs.

6. Different Dip.

1 lb sausage cooked and crumbled
1 can Ro-Tel (canned diced tomatoes and green chili peppers)
2 8 0z packages of cream cheese softened

Mix together and microwave until hot and melty.

7. Tortilla Chip Pie

Ingredients:
1 large bag restaurant style tortillas chips, crushed
1 lb. ground beef
1 pkg. taco seasoning
1 (16 oz.) jar of salsa (hot or mild)
1 (4-oz.) can diced green chilies
1 (16-oz.) can refried beans
1 (8-oz.) pkg. shredded mexican cheese


Instructions:
Preheat oven to 350
Brown ground beef in a medium skillet, drain.
Add taco seasoning & salsa to ground beef.
Stir beef mixture well.
Lay half chip in bottom of 9 x 13 pan that has been sprayed with non-stick cooking spray
Then half of the cheese
Next, layer can of green chilies that has been mixed with the refried beans.
Next layer beef mixture.
Layer remaining cheese. Cover up with the rest of the chips.
Bake at 350 for 25-30 min.
Let stand 5 min. before serving.
Serves 4 with lots of leftover. Just as good reheated.

I use cheddar cheese but you can use some velvetta with the cheddar if you prefer the texture of processed cheese.

QUICK AND EASY/ YA WANT QUICK AND EASY? :)

In a LARGE skillet with a lid or dutch oven type thingy with a lid:
Brown enuff hamburger meat to feed your family/dice a small onion innit if ya like onion.
Chop up half a head of cabbage and slice 3 or 4 taters into french fry shape or slice them like home fries ( just gotta fit in the skillet)
When the meat is 'bout browning,throw all that in on top of it along with ONE CUP of water-- put the lid on and cook 'til the taters are tender ( not long)
Oh! chunk on some salt and pepper too,not much salt.
You need a large skillet or pot to hold all that cabbage and a lid 'cause you're steaming the veggies.
Even us guys can do that ! :)
Maybe 15--20 mins all together.
