Cheesy Potato Bake

4 large unpeeled baking potatoes
1/4 cup butter or margarine
1 Tbsp. grated onion
1 tsp. salt
1/2 tsp. dried thyme
1/8 tsp. pepper
1 cup (4 ozs.) shredded cheddar cheese
1 Tbsp. chopped fresh parsley

Thinly slice the potatoes and place in a greased shallow 2-qt. baking dish. In a small saucepan, heat butter, onion, salt, thyme and pepper until the butter is melted. Drizzle over potatoes. Cover and bake at 425 degrees for 45 minutes or until tender. Sprinkle with cheese and parsley. Bake, uncovered, 15 minutes longer or until the cheese melts.
Yield: 6-8 servings.

YUM! I tried your recipe last night - but I also had a few leftovers on hand so I chopped them up and tossed them in with the cheesy potatoes. I had some chicken and ham, not enough for a meal by themselves as "a feature" so to speak , and a few ounces of frozen broccoli left. Wow, it turned into a one-dish wonder of a casserole! Sprinkled a little parm on top for good measure... and about another 1/8 t. black pepper. We're having the rest of the casserole for supper tonight. Thanks for the recipe!

Great recipe; thanks! I tried it last night too. I laid the slices of potato upright, like a roll of coins, doubled the butter and played with the spices. The edges, where I left the peel on, got crisp like french fries; family loved it and is still talking about how good it was.:)
