These three recipes are all from my Daughter in Law..... I personally really like the Frosted Banana Bars.... Yummy! I have a favorite Banana Nut Bread recipe I'm going to post to this topic later. If you have any add them here too.....

Banana Oatmeal Cookies

PREP: 10 minutes COOK: 15 minutes
Yield: 3 dozen

Ingredients:
3/4 cup shortening
1 cup packed brown sugar
1 egg
1/2 cup mashed ripe banana
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
3 cups rolled oats

Directions:
Preheat oven to 350 degrees F. Grease cookie sheets.

In a large bowl, cream together the shortening and brown sugar. Beat in the egg and mashed banana, then stir in the vanilla. Combine the flour, baking soda, salt, cinnamon and cloves, stir into the banana mixture. Fold in the rolled oats and walnuts. Drop by rounded spoonfuls onto the prepared cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.


Frosted Banana Bars

Bars:
1/2 cup butter or margarine, softened
2 cups sugar
3 eggs
1-1/2 cups mashed ripe bananas (about three medium)
1 teaspoon vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
pinch salt

Frosting:
1/2 cup butter or margarine, softened
1 package (8 ounces) cream cheese, softened
4 cups confectioners' sugar
2 teaspoons vanilla extract

In a mixing bowl, cream butter and sugar. Beat in eggs, bananas and vanilla. Combine the flour, baking soda and salt; add to creamed mixture and mix well. Pour into a greased 15-in x 10-in x 1-in baking pan. Bake at 350 degrees for 25 minutes or until bars test done. Cool. For frosting, cream butter and cream cheese in a mixing bowl. Gradually add confectioners' sugar and vanilla; beat well. Spread over bars. Yield: 3 dozen.


Banana Chip Muffins

Prep: 10 minutes COOK: 25 minutes
Makes 1 - dozen (12 servings)

Ingredients:
1 3/4 cups all-purpose flour
1/2 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup semisweet chocolate chips
1 egg
1/4 cup vegetable oil
1/4 cup milk
1 cup mashed bananas

Directions:

Measure flour, sugar, baking powder, salt, and chocolate chips into a large bowl. Mix thoroughly, and make a well in the center. Beat the egg in a small bowl until frothy. Mix in cooking oil, milk, and bananas. Pour mixture into the well. Stir only to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full.Bake at 400 degrees F for 20 to 25 minutes.

Here's my Banana Nut Bread recipe. I usually freeze a few of these for a quick breakfast snack. Also just a small tip, if your out of bananas or run short, the jars of banana baby food can be substituted for the bananas in most recipes with pretty good results. I keep a few around just for this purpose. I buy them when they go on sale for 4 for $1 at the store and they'll keep for well over a year in your pantry.

Banana Nut Bread

5 cups all-purpose flour
2 1/2 teaspoons baking powder
2 1/2 teaspoons baking soda
1 teaspoon salt
1 1/3 cups butter or other shortening
3 1/3 cups granulated sugar
6 eggs
2 1/2 cups mashed, very ripe bananas (about 5 bananas)
1 1/3 cups buttermilk
1 1/3 cups chopped nuts, walnuts or pecans
1/2 cup Poppy seeds (optional)

Cream the butter and gradually add in the sugar. Mix well. Add the eggs and bananas and blend thoroughly. Next, add the buttermilk and then the baking powder, baking soda and salt. When combined well start folding in the flour a little at a time until it is all blended in well. Stir in the nuts and the poppy seeds, if desired, then pour into 3 loaf pans that have been sprayed with a baking spray (or oiled and floured if spray is not available). Bake in a preheated oven at 350 degrees for 1 hour or until the bread springs back lightly when touched and a toothpick inserted into the center comes out clean. (Makes 3 loaves)
